Justin Box Did The Wine Poste Thing And Everyone Smiled

Just a few years ago we didn’t see many underground dinners, but as of late there have been several spots that have made a cottage industry of these intimate dining events in the most unusual locations. The Wine Poste is one of these locations, and the nearly hidden building was built equipped with a small kitchen and an even larger prep area to provide guests with this marvelous one-of-a-kind dining experience.  Many recognizable chefs from in and around the Dallas area have performed their special kitchen magic at Wine Poste, and last week we witnessed one from a chef that until recently had been on a sabbatical of sorts. Enter one of our favorites, Justin Box.  

Chef Box brought along a few friends to make the assist for the evening. Chef Mark McDaniel, who operates a very busy catering business and cafe was on hand, and said on several occasions how much fun it was to step away from his normal routine and help out a friend.

Besides the beautiful dinner, we also enjoyed a fun pairing with each course. The list was created by the men of the Wine Poste, and they did a particularly good job with this dinner. It is always interesting to see what they might come up with as far as pairings go since they only read the menu. Their imagination always works in overtime mode to pull off the perfect pairing.

Here is how the dinner went down:

DSC02358“Mexican Street Corn” elotes, roasted garlic crema, cotija, cilantro puree, paired with a 2011 Corazon Verde Albarino

DSC02354Coconut-melon soup, passion fruit espuma, Lump crab, toasted sesame with a 2012 Raymond Sauvignon Blanc

DSC02372T.g.h. Farms red oak salad, mascerated strawberry, feta, mint, white balsamic, served with a Château Coupe-Roses “Frémillant” Minervois Rosé

DSC02377Pan roasted squid, Spanish dry chorizo, sweet pea puree, herb fried bread, clementine, squid ink ” black butter” and a 2010 A Portela Mencia

DSC02387Smokey venison loin, pickled green tomato, white bean ragout, crispy pancetta, shaved garlic., and a 2010 Chateau Vrai Caillou Bordeaux Superieur

  1. Justin Box is one of the biggest talents I know. Never heard of him? It’s because he’s one of the most modest person’s you will probably ever meet. Don’t let that fool you-what he puts on a plate is anything but modest!!! Incredible evening with an incredible friend! Great people we served too!
