An Evening With Chef Paul Singhapong at Malai Kitchen

Now retired, chef Paul Singhapong has had a fantastic career working in fine kitchens in both Dallas and San Francisco. The chef worked at the Brasserie Savoy Restaurant in San Francisco, Beau Nash at Dallas Crescent Court Hotel, The Mansion on Turtle Creek and the Melrose Hotel. In 1990 he became the poissonier chef for the Adolphus Hotel’s French Room and in 1985 Singhapong joined the staff of the Lowe’s Anatole Hotel in Dallas. He was also executive chef at the Bay Leaf which garnered 4-stars from the Dallas Morning News. More recently Singhapong  was the executive chef of Cru.               Continue reading

Asian Mint: Wild-Caught Salmon, Dollar Sushi and a New Happy Hour

Why Wine Took Me To A Motel Off I-20 In Shreveport

Shreveport is known as Dallas’ little Vegas, full of craps tables and ante-free blackjack, but no one goes to Shreveport thinking they are going to get the full Vegas treatment. I may now have a solution for you. A Hot Bowl of Soup at Chef Hsu

It’s cool and misty out and this weather almost always screams for soup to fend off the chill. I made a bodacious tank of home-made chicken noodle soup this week that will last me through the winter, but what really makes the cut this time of year is something spicy. And preferably with hand stretched noodles. There are a few great options in the area including the Beef Stew Noodle Soup at King’s Noodles, which is fantastic year round.

Another fantastic choice, also off the beaten path, is Chef Hsu located south of Royal Lane on Harry Hines just on the cusp of K Town.

Giving Chef Hsu a good study you might be disarmed by the giant Chinese buffet in the large front room. Dismiss this area regardless the time of day and insist on the smallish room to the left that is swarmed by mostly Korean-Americans. This is where you find the real menu.    Continue reading
