I think if you were to tally up all the chef’s names we have mentioned or written about on craveDFW, Kent Rathbun’s would top that list. Not that we particularly like him (we do), but that he is so involved in many, many projects. Rathbun is known for his grill skills and now wants to share some of his guarded secrets with you and a few friends. When Mike Leatherwood opened his first Bone Daddy’s House of Smoke in Dallas he wasn’t looking at operating a breastaurant, but somehow along the way he was lumped into that category. He had an all female waitstaff wearing skimpy clothing, so technically that would throw him into the company of Hooters. Interesting enough, the gimmick was to be temporary while he perfected the Addison-based business. More recently Leatherwood re-engineered the uniforms to be more tailored and less revealing. What is left is some really good barbecue, hand-made the old fashioned way.
On a recent visit we learned that training was supreme importance for Leatherwood, and has a two day program where he empowers employees through his personal life coach. It is this treatment that nets a amiable employee and extremely low turn over.

Do you remember that time we told you that Kenny Bowers was going to open his Smoke House in the Shops at Legacy? If you read these pages often enough you know we love us some Kenny. The man has a knack for flavor and for style. He is a pretty cool cat in fact. All this is to say that the Smoke House is opening Monday.
Look for slow smoked meats and seafood, with full service, full bar and – wait for it – Grey Goose on tap. Go to 5760 Legacy Drive and follow the smoke.
Saturday evening Dallas had a glimpse into the first strike restaurant in the Trinity Groves area of West Dallas located at the foot of the new Margaret Hunt Hill Bridge. The night brought a foreshadowing of Babb Brothers BBQ which opens to the public Thursday, November 29, 2012. The large structure serves as the BBQ headquarters for Trinity Groves, the first of many restaurants and entertainment venues that will make up the new area created by restaurateur Phil Romano and company. The celebrity chef series at Cane Rosso hit a grand slam last night as Aaron Franklin from the much vaunted Franklin BBQ in Austin made his appearance after a weekend at the Meat Fight event. I had put this event on my calendar as soon as the chefs lineup was announced months ago, apparently so did many others as a line began forming at 5pm an hour before opening, by 6pm the line had reached down to local watering hole Adair’s.
