Retro Dining at Fairmont’s Pyramid

The Dallas Fairmont Hotel Executive Chef Andre Natera will pay an homage to the classically-trained chefs whose culinary masterpieces effortlessly graced the tables of Pyramid and the patrons who returned to the restaurant time after time to enjoy the romantic dishes. Chef Natera has an affinity for these more complex, but for him, altogether more satisfying dishes.

Among the five-course Pyramid Classics tasting menu are elegant dishes such as Lobster Bisque finished with Sherry and Chive Cream, Escargot Bourguignon served in a Vol-au-vont and a Grand Mariner Chocolate or Raspberry Soufflé for two. The menu is premiering tonight and will be featured in Pyramid Restaurant & Bar alongside the seasonal dinner menu through April 14, for $75 per person. Check out the full menu:

Baby Lettuce Salad, Tomato Petals, Lardons, Poached Egg and Herb Vinaigrette

Escargot Bourguignon served in a Vol-au-vont

Lemon Sorbet

Filet Mignon Au Poivre with Pommes Chateau, and Tomato Provencal

Grand Mariner, Chocolate or Raspberry Soufflé for two
