While in Southlake this week we spotted a restaurant that is about to open and stopped in for a look-see. Butterfly Restaurant is the brain-child of TJ and Brandee Sharp with executive chef John Gulluscio running the back of the house. Gulliscio is formerly of the senior residency, The Legacy at Brookhollow and Northwood Country Club, the chef has also worked hotel kitchens back east.
The menu is what Brandee Sharp describes as eclectic, serving tapas, small plates and a smattering of larger entrees as well.
The tapas sound appealing and different for this section of the woods with a bent of Spanish influence in such dishes as their foie stuffed Mission figs or a chorizo and Manchego stuffed green lipped mussels.
Glancing at the menu other notables that raised an eyebrow was the rabbit ravioli and a large ration of ceviches including one made with salmon and blood orange.
The entrée side of the menu includes big beef dishes, a paealla and wild boar ribs which sounds fun. Signature cocktails are all named after a butterfly, so get your nets ready for this one.
The restaurant is slated to open Wednesday April 20, and you can bet Crave will be there.
