Drink of the Week: Bailey’s Prime Plus

For this weeks Drink of the Week we looked no further than the president of the Bartender’s Guild and one of Dallas’ best known barmen, Michael Martensen from Cedars Social. We ran into Martensen last evening as he was preparing for the onslaught of revelers at Bailey’s Prime Plus  who intorduced their new cocktail menu developed by Martensen and last week’s Drink of the Week participant Eddie “Lucky” Campbell.

I likened the two-some to a modern day Martin and Lewis team, and they smiled. They were both probably trying to guess which one was the ladies man crooner type. regardless, they are both masters of their profession raising the bar of the cocktail scene in Dallas and Fort Worth one drink at a time. 

The new menu at Bailey’s Prime Plus included 11 new cocktails from a sultry Martini Prosecco with grapefruit bitters, Crème de Violette and edible gold leaf, the Femme Fatale to the more sturdy Rock-n-Rye Old Fashion conjured with lemon and orange oils and Angostura bitters. The latter being on of my personal favorite cocktails.

As the evening progressed both Martensen and Campbell were slinging drinks proficiently with the Bailey’s staff, who all seemed extremely comfortable in their tending skills, working as a single unit.

Martensen enjoys a great cocktail and says these are the key elements: “fresh ingredients, quality spirits, passion and service with a smile”.  When not at work you might find him sipping a cocktail with another barmaster Charlie at the Windmill.

Today’s Drink of the Week comes off the newly developed Bailey’s menu. Behold:

The Padrino
1.5 oz Flor De Cana 7yr
.75 oz Pineapple Sage infused Dolin Dry Vermouth
.50 oz Cherry Heering
.25 oz Falernium
2 dashes of Angostura Bitters
 

 The Padrino is a play on the Presidente, one of FDR’s own concotions.

You have to love a president that can kick Nazi butt, end the Great Depression, repeal Prohibition, and at the end of the day make his own cocktails.  He was a real man’s man.
