The Cheese Peddler located in Shed 2 at the Dallas Farmers Market which is owned and operated by Bob Zayus. 90% of the cheeses carried by Zayus are locally sourced from such purveyors as Veldhuizen Family Farm in Dublin, Texas or the Mozzarella Company located in Dallas in Deep Ellum.
The few imports outside of Texas are real cheese curds from Wisconsin which actually come in four varieties and several goat cheeses from Spain.
“I think we have a nice mix of cheeses from Texas,” said Zayus who is a retired computer salesman. Zayus and his wife Judy were living in Georgia and decided to move to Texas to be near his grandchildren. That is when the idea for the cheese operation came up and within months they were up and operational.
Before opening Zayus made it up to New York where he took an intensive week-long cheese course with Murray Cheeses, which launched his new career.
We asked Zayus which was his favorite cheese, and he responded with a smile that all the cheese was his favorite, but was partial to the blues.
