First Look: Sisu Uptown Resort

by Steven Doyle

Sisu Uptown Resort opens its doors officially today and we took a peek yesterday afternoon. The new restaurant plays host to a fantastic bar with a great patio, but also features a members-only pool that plays into the resort theme. Owned and managed by Dan Bui (formerly of Ghost Bar) and a team of investors, Sisu is definitely not your average restaurant.

The restaurant opens today from 11am to 1pm, and also serves brunch. Executive Chef Stefon Rishel created plenty of dishes packed with tall flavors like his duck quesadillas and pork belly sliders. The menu features light dishes such as soups and salads, and plenty of seafood items like a black cod with roasted asparagus, tomato-ginger consommé and a grilled redfish with garlic spinach and a grapefruit watermelon broth.

There are some heartier dishes as well such as a crispy duck, lamb chops and a dry-aged bone-in rib eye.

The cocktails were developed by Bui and are simple fresh fruit libations that are not fussy, just very approachable. Some of our favorites were the creamsicle and a very nice sangria.

There is a late night menu which can be served poolside, or in one of the handful of cabanas which can be reserved. Other features include a private dining room upstairs that overlooks the pool.

You will find Sisu located in Uptown just across from the Crescent at 2508 Maple.
