Gastro Bomber Food Truck Invades The City

An interesting new food truck has rolled onto the scene. Make welcome Gastro Bomber which features English-style pub. The truck is owned and operated by former active duty Marine Robert Robbins and his brother-in-law Chef KTJ, or KT for short.

We spotted the tuck rolling the North Dallas area and anchored on Forest Lane at the first Tuesday truck rally in the Sprouts Parking lot near the Marsh Lane intersection.         

The truck creates some nicely kicked up truck fare including fish and chips, a chicken and waffle sandwich, a Brazilian street food specialty, the picanha sandwich which is made with grilled flank steak, Irish potato soup and mushroom sliders. This doesn’t sound all that Irish, but definitely pub-like. Look for more pub grub in coming months.

I chatted up Robbins this morning and he said that the trick behind the truck was to find the right vehicle. He already knew they needed a solid machine like an old Snap On Tools truck, but demanded a diesel engine. He spotted two, one in Houston for $22,500 and one in New jersey for $9,000 and much lower mileage. You can guess which truck he chose, so Robbins and KT flew out to New York and met the truck owner to take the vehicle for a test drive and came home 39 hours and 1,700 miles later.

After the truck was wrapped and ready for cooking they took their menu on the road, and have been busy cooking for the past month.

Robbins, the Marine who is really a jack of all trades, was formerly in construction, but grew tired of lay-offs due to the poor economy and few building starts. His partner KT is a chef who has worked at the Mansion on Turtle Creek, The Gaylord Texan and owned a catering business. Both were eager to make a new start into a business that is a certain hot commodity. Their eventual plan is to go full on brick and mortar.

The truck has a fun design and reflects Robbins Marine background, and pays homage to the troops on the truck. Robbins is also quite engaging, which he says helps keep the lines flowing and full.

Look for Gastro Bomber tonight in Keller at the CVS parking lot along with So-Cal Tacos.
