Happy Chefsgiving: Mark McDaniel

Thanksgiving is upon us once again and all the gobblers are running for cover. To get you in the mood for a little fun and relaxation we asked a few chefs around Dallas a few questions so we get our dinner cooked just right. We will run their answers both today and tomorrow, so check back often to see how your favorite chef weighs in on the holiday.

You may have seen Mark McDaniel working at one of the many charity events throughout the Dallas area. The chef champions great causes and is always willing to lend his spoon to help. McDaniel is the owner and chef genius behind ReMARKable Affairs Catering. His business was named best caterer by the Dallas Business Journal and is this remarkable perfectionist. McDaniel sends us some Thanksgiving loving with his answers today.     

Do you have any industry secrets on a perfect Turkey?

Get some help!  I’m amazed every year at how any try to do it ALL.  Give thanks for your friends and let them assist you!

Canned or fresh cranberry sauce? 

You’re kidding, right?

What is the best Thanksgiving dish you had as a child? 

It’s the same one I got deathly sick on, and knew I would, but it was one of those that was so freakin’ delicious, I didn’t care!  Did I mention I’m not usually the skinniest guy in the room?  It’s mama’s Roasted Sweet Potatoes with Brown Sugar and melted Marshmallows!

What are your favorite holiday tradition. 

Coming from such a small family, it is really cool having a house full of family and friends.  Of course, as a chef, you don’t get too many declines!
