Dallas IWFS Hosting “The Tastes of Piedmont at Gemma”

The Dallas Chapter of the International Wine & Food Society presents “The Tastes of Piedmont at Gemma”. This special event will take place on Monday November 14th at 7pm.

Join the Dallas Chapter for a five-course dinner as we explore wines made in the province of Piedmont in the northwestern corner of Italy paired with chef-driven dishes inspired by the cuisine of the region. This special dinner is open to both members and non-members (what a fantastic opportunity to join).

Gemma was awarded restaurant of the year and garnered widespread acclaim in Dallas since they opened in December of 2013. Check out we had to say about Gemma’s opening.

The event will begin with bubbles and passed appetizers at 7pm, with the dinner beginning promptly at 7:30pm.

The team has worked together to pair unique and extraordinary dishes with wines of Piedmont in order to bring you an unforgettable evening. The Dallas Chapter of the International Wine & Food Society invites you to join us on Monday, November 14th at 7pm. Purchase your seats here.

Carmina, Prosecco Loggia

Obtained from grapes from selected vineyards of the Treviso Piedmont, the Carmina is elegantly-textured with layers of perfumed fruit. It shows outstanding delineation in its white peach/pear aromas and flavors, along with notable length and a long, satisfying finish.

Iberico Secreto
La Battistina Gavi 2014

A fantastically tender and highly prized “secret” cut from the shoulder, the Secreto is darkly colored, and has a long grain that appears striped due to the dense marbling found in the Pata Negra breed.

Grown on chalky, mineral-rich soil along Piemonte, this impressive single estate Gavi is made from old vines with an average age of 35 years old. Unoaked, the wine has abundant minerality, refreshingly cool apple and pear fruit and an impressively long finish.

Rabbit Bolito
Rabbit Sausage, Zipper peas, Parmigiana Brodo
Luigi Einaudi, Dogliani, Dolcetto, 2013

For many, the peak of Italian civilization is reached every time they avail themselves of the depths of a pot of bollito misto. Each of its unfailingly tender components brings a distinct taste to the table, though all are bathed in the combined cooking juices that convey the essence of every ingredient.

This Piedmont gem is bright, dense and intense. A medium-bodied red that offers aromas of blue flowers, dark berry, underbrush and a whiff of cake spice. The palate delivers blackberry, red currant, ground pepper and a note of star anise alongside firm, refined tannins

Tajarin Pasta
Alba Truffles, Sage, Butter, Beef Stock
Monsecco, Ghemme 2009

Tajarin is a ribbon pasta, similar to tagliatelle but thinner. It is a traditional recipe in Piedmont and made of an egg pasta dough

“Alba” Truffles are found in Northern Italy and are harvested in the fall and early winter in Piemonte. They have a golden exterior with delicate tan or cream colored flesh and a strong musky and slightly garlicky aroma

From a small area in the NW region of Piedmont with only 210 acres of vineyards, this Ghemme is a dry red wine characterized by its rustic and age-worthy characteristics, displaying a ruby-red color and spicy character.

Duo of Piedmontese Beef
Tenderloin and Short Rib, Local Potatoes, Roasted King Trumpet Mushrooms, Wild Arugula
Conterno Fantino, “Sori Ginestra” Barolo 2009

Exceptionally lean and incredibly tender, Piedmontese beef is a healthier beef without sacrificing flavor. Piedmontese cattle are DNA tested to confirm their unique heritage. The beef lower in fat and the cattle are never given antibiotics or steroids. The breed is raised through a ranch-to-fork approach that ensures traceability, environmental sustainability, and humane animal handling,

The estate’s most complete and powerful wine, it boasts deep garnet with ruby hues, rich, fruity and persistent bouquet of rose petals, brushwood and berries; full-bodied, luscious and austere on the palate.

Piccola Sorpresa
Atelie, Brachetto d’ Acqui

Brachetto d’Acqui is a sparkling wine made from the light, red Brachetto grape. It is one of the few sweet Italian wines to achieve DOCG status. It has pronounced fruit flavors with a preponderance of strawberry, raspberry and other red fruit flavors that glissade across the tongue.
