Smoky Rose to Open in East Dallas Winter 2016

Smoky Rose is a chef-driven smokehouse in a relaxed garden setting will open this winter at 8602 Garland Road in Dallas (across from The Dallas Arboretum).

The new neighborhood-dining destination aims to provide a comfortable experience with a relaxed interior, large patio, open smokehouse and beautifully landscaped garden area serving lunch and dinner. The rustically refined menu is paired with thoughtfully selected wines and local beers.

Co-owner, David Cash explains, “this has been a long, exciting road preparing for the unveiling of Smoky Rose, and I am proud of our team for working hard to craft an experience – from menu to design to service and more – that we think will be a great addition to the well-established East Dallas neighborhood.”

Although this restaurant is inspired by its custom smokehouse, Executive Chef David Gauthier’s menu will also feature dishes that appeal to a broad audience.  Lighter dishes play an integral role and take inspiration from the garden. The menu will feature items such as Beet Salad, Kale Salad, Apple Salad, Airline Chicken Breast with cauliflower puree, asparagus, house pickles; Smoked Pork Loin with roasted root vegetables, banana sweet mash, apple and onion veloute; Sweet and Smoky Salmon with leek risotto, sautéed greens and maple glaze.

Lunch will offer most of the same starters, salads and sides from the dinner menu but will also feature sandwiches from the smokehouse. Smoked meats by the ½ pound or pound have their own dedicated place on the menus as well.

Cash, a Dallas native, along with partner Jeffrey Schramm interviewed many chefs before deciding to hire from out-of-state. Chef David “Spoon” Gauthier comes to Dallas from Tennessee.

About Executive Chef David Gauthier 

Born in Worcester, Massachusetts Gauthier graduated Le Cordon Bleu College of Culinary Arts (Portland, Oregon) in 2002. He worked in several restaurants in Chattanooga, Tennessee before working as Executive Sous Chef in Sewanee at the University of the South. From there he became Executive Chef of Kitchen at Union Square before becoming Executive Chef at Bitter Alibi. He moved to Dallas for the Smoky Rose Executive Chef position this past summer.

About Owner/Creator of Smoky Rose, David Cash

A Dallas native and Southern Methodist University graduate, Cash co-founded Digital Risk in 2005, delivering capital risk management solutions through proprietary analytical metrics and innovative technology applications. From its nascent beginnings in Orlando, Cash and his partners quickly grew the company, creating 2,500 jobs across 7 domestic and 2 international markets by the time it was acquired in 2013 for $200 million. At that time, Cash returned home to Dallas to focus on personal projects and philanthropic engagement.

About Co-Owner, Jeffrey Schramm 

Schramm has been involved with restaurant operations since his first job as a pizza cook at the age of 15. Upon graduating Le Cordon Bleu Academy, he worked in several high-end restaurants throughout Chicago.

He seized an opportunity with Chipotle and enrolled in Kendall College to pursue a degree in Business Management. While earning his degree, Schramm quickly rose through the ranks of field operations with Chipotle and ended up leading annual sales of more than $30 million from 16 restaurants in two states.

In 2013, Schramm left Chipotle and accepted a role as Director of Operations with YUM brands in their emerging restaurants department. In that role, he was responsible for the development, launch and field support of Super Chix and Bahn Shop restaurants.

    My family decided to eat dinner here on Christmas Eve. It was an early dinner and they were out of brisket, sausage, and chicken. This was hard to believe since that is nearly half the selection of meats on the menu. The food we ordered was very good, however I was not impressed with the poor management of the menu selections. I would recommend the sweet potato and banana mash. It was delicious. Unfortunately, I would not recommend the restaurant. It was not the best dining experience for $140.

    My husband and I had dinner at the Smoky Rose the day after X-mas. The chips with guacamole and queso were good, the burger and fries were good, the Half chicken was dry – the size of a large wing or small thigh. The cauliflower puree was flavor less. Lots of room for improvement. Honestly the burger down the street at the bar/lounge “Here” was much better.

    A friend and I had dinner here last night. The queso and quac were very good. My hamburger was good, especially with the bacon jam. The fries too salty. The pot o cream was delicious. So yes, the food was well above average except for the lemons served were too small and rather mangled from cutting them so small.
    HOWEVER! many of the employees we encountered were rude and condescending — the hostess, the manager, and one of the women waitresses. Although our primary waiter was friendly, he did not listen to the drink order and we had to ask for him to order twice.
    I’ll go back, but their personnel are NOT service oriented!!

    We absolutely love this place. I think the comments thus far were written shortly after it opened, so probably growing pains, which most new restaurants go through. We first tried it in May 2017 and found the wait staff to be excellent, but what matters, of course, is the food, which was outstanding. We have returned several times since and have never once been disappointed, in fact always extremely impressed. Other than the delicious fall-off-the-bone smoked meat selections, their sides are stand outs. The two of us split the brisket plate and still can’t finish it all, so the portions are quite generous. The atmosphere is relaxed but upscale and a very well designed interior and exterior. Probably the best patio experience in Dallas too when the weather’s nice. A really well done addition to our East Dallas neighborhood and we are already regulars. Live long and prosper Smoky Rose!

    Today I visited smokey. My server was great ( Steve)however the manager (Oscar) was terrible. I complained that my chicken was not cooked all the way through. And the manager assist that the chicken was cooked and very rude about it. I was going to order something different however I decided not to because of the customer service from the manager. Side note I’m at the restaurant with a group of 25 or more people. And I was very disappointed how this all played out. Very nice restaurant but will not be returning.

    I’m a local neighbor and unfortunately had an AWFUL experience at your restaurant on December 15th. First and foremost it was my first visit to your restaurant and I was excited to dine-in since I pass by daily and your parking lot is full. I chose a special occasion: my son returning home from college. I made reservations and requested a window seat inside. The hostess seated us in a very cold back room. I requested to move to a window seat (per my reservation request on OpenDoor) however she looked around at the open booth next to the window and said, “I’m sorry but that’s reserved for 6 people” and left us in the cold room. As we waited for our waitress, I waved down another hostess and asked if we could move to the numerous open 2-seater tables outside of the cold room and she said, “sure” and walked away. After we settled in, the original hostess walked past us and placed a couple (only 2 people) in the booth I had just requested to be seated in but was denied because she said it was reserved for 6 people. At this point, I am frustrated because the hostess definitely did not want to be bothered with me nor my special occasion. Fast forward a few minutes…..a fight broke out behind our table. This fight included two tables of very drunk people. Their tables were lined with numerous shot glasses. It was an appalling evening. The belligerent group started to attack physically and verbally another group. No one came by to check on us nor apologize for the appalling event. I will never return. I will take my business elsewhere. My neighbors on San Benito, San Rafael and San Cristobal warned me that Smoky Rose was not a local favorite but I wanted to give your restaurant a chance and unfortunately I was SO DISAPPOINTED. Moving forward, I will not hesitate to share my awful experience nor will I dine at your location (minutes from my house) again.

    By the way, I shared my experience with Charlie (your brother) and he apologized and wished me a Merry Christmas. Charlie’s response was just as cold as the original hostess. He couldn’t be bothered….
