Chef Justin Holt will be hosting his first late night Pop-Up Ramen and Curry Shop of the new year January 7th at Whitehall Exchange serving Ramen and Japanese Style Curry starting at 6pm.
Holt will be featuring Tori Paitan Ramen and Japanese Battleship Curry utilizing the local offerings from Windy Meadows Farm.
Tori Paitan Ramen’s base is comprised of a kotteri (rich) style broth made solely from chickens. A sibling to the more popular Tonkotsu broth, Tori Paitan utilizes the collagenous properties of fowl to create a rich broth perfect for Holt’s toppings made from roasted pork Chasu, Ajitama (a marinated soft boiled egg), marinated bamboo shoots, negi, and his latest recipe for alkaline noodles.
Curry was first introduced to Japan in 1872, the Imperial Japanese Navy, took notice of the growing popularity of the dish and by the end of the Meiji era, curry was common on IJN warships. Every ship in the IJN is known to have their own style of this hearty meat based stew served over rice. “It’s a comfort food for me,” says Holt, “I like that this one simple dish can have so many variations that are truly unique to the creator. The last time I served Battleship Curry at a Pop-Up it sold out in 15 minutes and I wanted to bring it back so more people can try it.”

Ramen will be $10 a bowl and Curry will cost $5, at this cash only event. Holt will feature his signature Ramen at Whitehall Exchange on January 7 starting at 6pm- until the soup and curry are gone. People are encouraged to come early, as it is common for Holt’s events to sell out within an hour or so.
Justin Holt is the Sous Chef at Lucia in the Bishop Arts District. Lucia is open Tuesdays through Saturdays at 5:30 PM and reservations are highly recommended.
