The Inspiration Behind Spaulding’s Specialty Spices

Growing up with a passion for food via television cooks such as Jacques Pepin and Martin Yan, James Spaulding has followed this dream to form Spaulding’s Specialty Spices. Cultivating his own organic raised bed heirloom garden, Spaulding founded his Dallas condiment business in 2013. This is where you will find his kicked up creations such as his blends of dry meat ande vegetable rubs, flavored salts, teas and spices.

Recently we noticed Spaulding’s Hot Italian Honey which absolutely fascinated us. y. Uses are great on meats, cheeses, BBQ, ribs, chicken, charcuterie, biscuits, ice cream, veggies, alcoholic and non-alcoholic beverages and more. It really takes Pizza to the next level.We asked the spice maker what his inspiration was for this product which is a mix of Italian chiles, vinegar, and local honey.

“I have always had a love for condiments. I use honey the most, so I began infusing honey with herbs, spices, and what not. It was pretty much the same skill set I was using with seasonings, and a natural extension. I was never satisfied with my packaging for the spicy honeys. So I took them off our menu for a few years. I wanted to get them into restaurants, bars, bakeries and needed a more useful bottle for those in the industry. Which I finally found in January, and should be arriving shortly,” said Spaulding.

“In the few years it has been off the menu, I have seen it pop up on pizzas. I wanted to have a honey that uses a blend of Italian chilies to pair with a pizza to honor the heritage. I have done a few other blends as well like TX BBQ Honey- another blend with Southern Chilies which pairs with Fried Chicken, Ribs, and BBQ”.

Spaulding has a few more items in the pipeline in various phases of research and development. He doesn’t release anything until it meets his personal standards.

“We are four years in, and have rave reviews, so it seems to be working. I have had some time open up, so you will be seeing more of us in the coming months in restaurants, and stores around town, and across the United States”.
