Victor Tango announced today that Jeff Harris joined the team as executive chef.
“We had the opportunity to work with Jeff during his time at American Food + Beverage (AF+B) and could not be happier for him to rejoin the team,” said Nik Katz, director of restaurant operations at Headington Companies. “Harris’ culinary philosophy is a perfect fit for the incredible culinary program at Victor Tangos. With Harris at the helm, we will continue to serve fan favorites, tailored with his fresh approach, and some new things that are sure to become cult classics.”
Harris will be incorporating new dishes to the menu over time. Several of Harris’ newest menu additions include Roasted Beets with avocado puree, goat cheese, orange and hazelnut crumble and Roasted Cauliflower with green mole, grapefruit, parsley, mint & charred tortilla.
In 2010, Harris was named one of the best chefs in North Texas. Then in 2012, as executive chef of Bolsa and then Bolsa Mercado, Harris earned a four-star review and was recognized again as one of the best chefs in the city. Prior to joining Victor Tangos, Harris served as executive chef of Fort Worth’s West 7thoutpost, AF+B. With Harris at the helm, the concept received rave reviews and a spot on 10 Best Restaurants in DFW list.
“Victor Tangos is a place where people come to hang out and celebrate, and the menu and vibe will continue to reflect that,” said Jeff Harris. “From the glass to the plate and everything in between, the restaurant is always alive and buzzing. We’re going to keep the plates playful and memorable, and hopefully have guests still thinking about their great experience long after they’re gone.”
Harris joins the Victor Tangos team at an exciting time for the restaurant. Bar Manager Andrew Stofko was promoted last fall and has taken the reigns spearheading the bar program with his own flair. With cocktail additions like the Seppuku Reale made with squid ink, furikake cordials and Amaro Montenegro and the Tiki Nightmare with white rum, fresh watermelon and lime, orgeat and pepper syrup, Stofko is constantly playing with new ingredients and flavor combinations to develop the perfect libation for Victor Tangos guests. The team also recently welcomed Heather Borges as general manager. Borges came to the restaurant from Filament where she was service director.
