Wild Salsa now has three locations in the DFW area including the original downtown Dallas, Fairview, and the latest located at 300 Throckmorton in Fort Worth. This is good news for those looking for seriously good Mexican cuisine including their crazy good tacos, a tamale that will bring tears to any grown aficionado and over 100 tequilas to raise your spirits.
Our most recent visit was to the downtown Dallas location which is located at 1800 Main Street across from their sister restaurant Dallas Chop House. There we found Chef Katie who we soon discovered is not only a fantastic savory chef, but has extreme skills in the pastry department which is unusual as most chefs choose a path and excel at it. In Katie’s case she just excels.
Wild Salsa has these fresh flavors and authentic takes on Mexican not found at your local Tex Mex haunt, these dishes are serious. Look at the al pastor tacos, or perhaps the redfish sizzled ala plancha.
Begin your dining experience with the antojitos which include a queso fundido, always a good find on a menu. This version is super kicked up and addictive with house-made chorizo, a tasty jalapeño-potato-onion mix, sizzling Mexican cheese served with corn tortillas. You will also find a very good ceviche.
With the name salsa in their name they best step up with at least a few good versions, and indeed they have. Look for a spicy concoction with habanero, onion and carrot, a poblano pecan pesto, a grilled pineapple pico, and our favorite made in a molcajete with serrano, red onions, cilantro and fire-roasted tomatoes. Superb.
We went seriously insane over the pork carnita tamale that is chile rubbed pork, cotija with a smoked guajillo drizzle wrapped in a banana leaf with a serving the size of a small chihuahua. The masa is moist and flavorful with the delicious filling.
One of the most intriguing dishes is the pork shank barbacoa that is Modelo braised, slow roasted and served with salsa borracha, roasted vegetables and a black bean stew. All the flavors are mind-numbing and will draw you back again.
Finish your fiesta feast with housemade churro that is really a canvas for the over-the-top horchata ice cream. If you do not save room for this dessert then we may only wish you the best of luck until you are able to return to Wild Salsa. Next time begin with your dessert, perhaps with a side car of tequila.
