Chefs Stephan Pyles and Tim Byres Unveil New Programming at Flora Street Cafe

Chefs Stephan Pyles and Tim Byres of Stephan Pyles Flora Street Café at HALL Arts have unveiled their new plans in the evolution of the iconic Dallas restaurant. Experiential dining offerings include new lunch and dinner programming, a fresh spin on the tasting menu with its own luxury venue, and a brunch menu that has recently launched. The evolvement comes after the December announcement of the collaboration between Chef Stephan Pyles and Chef Tim Byres, formerly of the award-winning restaurant SMOKE.

“I never thought after 35 years of owning restaurants I would be this excited about a new direction,” said Chef Stephan Pyles. We will be able to offer two separate and very different dining experiences. While making the experience in the main dining room less formal, and the menu more “approachable”, we will transition the current private dining room into a “restaurant within a restaurant” with a progressive, innovative 12 course tasting menu”.

The development of the private dining room, launching in late April 2019 with a name soon-to-be-released, will feature a young, vibrant chef from outside of Texas. The 16-seat private room will feature a 10-12 course tasting menu, with two updated price levels of notable, small vineyard wine pairings, for those looking for an elevated and intimate dining experience. The tasting room will offer a more formal, upscale setting poised to become one of Dallas’ most exclusive dining experiences in an ultra-luxe environment five nights a week.

Décor in the tasting room will offer a warm “club-like” feel with lush draperies, a dramatic chandelier and colorful paintings by Dutch artist Arie Van Selm. Internationally renowned fiber artist Tim Harding, who created the iconic large art piece in the main dining room, has been commissioned to create an original silk piece for the room as well.

“We are currently in the process of interviewing a handful of carefully-selected candidates for the new Tasting Room” said Managing Director Tim Byres. “I am thrilled to see this exciting concept come to fruition.”

Sunday Brunch, which launched to the public this past weekend, incorporates influences from Tim Byres’ previous concept SMOKE, as well as Chef Pyles’ signature dishes throughout the years and brand-new recipes created in collaboration by the duo. The brunch menu is divided into four sections: starters, breakfast-inspired entrees, lunch-inspired entrees and sides. Highlights from the menu include: Coconut Chia Seed Bowl with Caramelized Banana, SMOKE’s famous Heavy-Handed Blueberry Pancakes with Vanilla Poached Apricots, Pulled Pork BBQ Eggs Benedict, Crab-Asparagus Salad with Smoked Trout Mousse, as well as Pyles’ signature dishes such as Tamale Tart with Roast Garlic Custard and Gulf Coast Crabmeat and the original Southwest Caesar Salad with Jalapeno Polenta Croutons and Parmesan Chicharron. Brunch cocktails include a category of mimosas and Bloody Marys, including a Spicy Blood Orange Mimosa, and  Texas Michelada. The signature cocktails, such as the “Flora” with gin, crème de violet and elderflower, will also be available.

The reimagining of Stephan Pyles Flora Street Café at HALL Arts into a more approachable dining experience in the main dining room also includes the launch of new lunch and dinner menus, incorporating curated dishes from the duo’s collective dining experiences. The ambience will be less formal, with walnut table tops rather than white linens, positioning Flora Street Café away from being thought of as a special occasion restaurant to a more approachable, yet still elevated, daily dining destination in the Dallas Arts District. The redesigned lunch menu will be available to guests Monday, April 1 with dinner closely following on Friday, April 5.

Guests of Flora Street Café will be introduced to new lunch and dinner plates including TX Akaushi Ribeye featuring Crispy Potato Pave, Charred Shallots and Bone Marrow Custard, Cured Steelhead Trout with Beet Textures, Whipped Horseradish, and Basil, and Fire Roasted Gulf Oysters served with Scampi Butter, Wild Boar Chorizo, and Ash Salsa.

Just in time for patio season, Flora Street Café will offer guests a greater ‘street presence,’ as the restaurant will add more patio seating. The addition of a champagne and oyster cart will offer a festive al fresco dining experience. Additionally, brunch-goers are welcome to bring their furry friends with Flora Street Café’s “pooches on the patio” programming, featuring snacks and water bowls for dogs.

In addition to the purposeful projects, Pyles and Byres will spearhead the 11th Annual No Kid Hungry Dallas Dinner with the best chefs in the country, including Guest of Honor Jeremiah Tower, star of the 2016 biographical documentary from Anthony Bourdain, Jeremiah Tower: The Last Magnificent, on Sunday, April 28, 2019 at Flora Street Café. Over the past 11 years Pyles, with the help of Tim Byres as a returning guest chef, has helped raise $1 million to help eradicate childhood hunger.

Stephan Pyles Flora Street Café is located in the heart of the Dallas Arts District at 2330 Flora Street, Suite 150, Dallas, TX 75201. It is open for lunch Monday through Friday 11:00 am to 2:00 pm. Dinner is served nightly Monday through Thursday from 5:30 pm to 10:00 pm and Friday through Saturday from 5:30 pm to 11:00 pm. Sunday brunch is available from 10:30 am to 2:30 pm. The lounge bar opens at 4:00 pm and weekday happy hour is offered from 4:00 pm to 6:00 pm.

    I hope the patio area is the raised front area and the doggie venue is on the street. Really don’t like sharing my eating space with dogs. How many of your high end clientele bring dogs? Decide on your priorities.
