Carte Blanche Offers Fine Dining at Night and Muffins in the Morning

Husband and wife chef team Casey and Amy LaRue have opened Carte Blanche in the old Mudsmith space on lower Greenville.  The restaurant offers two tasting courses, which can be paired with wine or tea service. A 12-course tasting menu runs $150 while the 4-course option only sets you back $75. Wine pairings are priced at $115 or $225 for higher end options. Wines may also be ordered à la carte, or you may bring in a bottle of your own for a $45 corkage fee .

In the mornings Carte Blanche transforms into a bakery where Chef Amy’s creations take over. Pastries, breads, coffee, donuts and a rotating selection of breakfast items are available on Wednesday through Sunday from 7am till noon.

The LaRues have worked at Per Se, Daniel and Joel Robuchon (although this is now in dispute), some of the finest Michelin starred restaurants in the country. After moving to DFW, they operated during the COVID era by throwing pop-ups at AirBnBs and shuttered restaurant spaces.

Reservations, which are prepaid, are available through their website and Tock. Although they are not refundable, they are transferable.

Wild rice cracker, local goat cheese, rhubarb and fermented gazpacho

Snapper with spicy passion fruit sauce, grapefruit and radish; Antelope Tartar with chives, oyster aioli and sunchoke chips; Bonita with dashi gelée and finger lime

Wild Boar Belly with snap pea romanesco, jicama and Marconi almond foam

Foie Gras Mousse with smoked peaches, preserved citrus (not pictured: cultured butter croissant)

Smoked Tilefish with leeks, asparagus and sherry broth

Dos Lunas “Araguaney” Agnolotti with artichoke and huitacoche-truffle puree

Wild Mushrooms with carrot puree and tamarind-black garlic jus

Dry Aged Duck Breast with corn puree, smoked tomato and jus
