Ida Claire Hosts Absinthe Cocktail Pairing Dinner

Rebellious by nature, Ida Claire is redefining the time-honored traditions of the South by inviting guests to experience the fascinating liquor, absinthe, during a unique pairing dinner featuring scratch-made dishes and absinthe cocktails.

On Tuesday, April 5 at 7 p.m., Ida’s Chef Taylor McCreary will walk guests through specially-curated dishes and Bar Manager Alex Kleider will guide guests through absinthe cocktails during a five-course pairing dinner at Ida Claire in Addison. Additionally, Kourtney Misock from Republic National Distributing Company will make a special appearance to educate guests on the spirits features. The special prix-fixe menu will include:

Amuse-bouche

  • Quail Egg Croque Madame Canapes – Ham, béchamel and Swiss cheese. Paired with “Absinthe Minded,” a cocktail mixed with absinthe, grapefruit, white wine simple, blanc vermouth, orange flower water and soda topper.

First Course

  • Green Garlic Soup – Everything spiced crouton and chive blossoms. Paired with “The Kriminel,” a cocktail mixed with absinthe, rum, lemon, lime, basil, orgeat and honey.

Second Course

  • Grilled Escarole & Frisée – Duck bacon lardons, cured egg yolk and fines herbs vinaigrette. Paired with “The Wicked Fairy,” a cocktail mixed with absinthe, lemon, lime, pineapple, elderflower liqueur, Lillet and gin rinse.

Third Course

  • Pan-Roasted Trout Almondine – Peas and baby carrots with herb persillade. Paired with “Exsuze Me,” a cocktail mixed with absinthe, carrot infused gin, Suze, lime, cucumber, simple syrup and ginger beer.

Fourth Course

  • Smoked Duck Breast – Morels, asparagus, crispy new potatoes and bordelaise. Paired with “Silence and Smoke,” a cocktail mixed with absinthe, mezcal, allspice liqueur and angostura bitters.

Fifth Course

  • Profiteroles – Filled with pastry cream and Texas blackberry compote. Paired with “Absinthe Makes the Heart Grow Fonder,” a cocktail mixed with absinthe, cognac, coffee infused Cocchi liqueur, cold brew coffee and chocolate bitters.
