The Exchange to Open Two New Eateries in Next Month

The Exchange at the AT&T Discovery District is adding two new eateries to the food hall in the next month including Easy Slider and Birdie. Chicken concept, Birdie, is set to open Monday, May 23 and will offer a variety of fried chicken options and sides from award-winning chef, Joshua Harmon. Easy Slider is set to open Wednesday, June 1 and is a Dallas favorite known for serving up award-winning, inventive sliders. 

Birdie is the newest concept from Chef Joshua Harmon that is based around fried chicken tenders, fried chicken sandwiches, housemade sauces and sides. The eatery features Southern, Korean, and Japanese influence with items such as Crispy Chicken Steam Buns and Korean Spiked Hot Honey Chicken on the menu. Sides range from Hawaiian-style Mac Salad inspired by Chef Harmon’s grandmother to a warm potato salad that was featured on the Food Network. All chicken at Birdie is high-quality, all natural, non GMO and free range. 

Chef Josh Harmon says, “We are trying to raise the bar in terms of what a chicken tender place can be. We’ll offer unique items such as different flavors of Kool-Aid slushies and a chicken biscuit we only do on Sundays.”

Chef Harmon has an extensive history in the food and beverage industry beginning with his training at some of the best restaurants in New York City such as The Dutch, Le Cirque and Buddhakan. Harmon has cooked at multiple James Beard-nominated restaurants including Petra and The Beast. In 2019, Harmon competed in “Restaurant Rivals” on Food Network and won first place.

The award-winning mini burger concept, Easy Slider, started in 2011 when owners Caroline Perini and Miley Holmes were searching for “the perfect bite”. Easy Slider began as a food truck and has since grown to four food trucks, a full-service restaurant and bar in Deep Ellum, an eatery in Harvest Hall in Grapevine and now, The Exchange. The menu consists of classic sides and inventive sliders inspired by Perini’s Texas roots and Miley’s obsession with all things southern. Their signature slider, The Sweet & Lowdown, was featured in Texas Monthly’s 50 Best Burgers in Texas and is made with certified Angus beef topped with goat cheese, strawberry jam and bacon. 

Perini says “The Exchange is Downtown Dallas’ go-to culinary destination and we’re thrilled to join the team! We’re looking forward to being a part of some of the best independently owned restaurants in town.”

Easy Slider will be on the first floor of the hall in the former Bobber’s Burger space. Bobber’s has moved to The Exchange’s sister concept next door, JAXON Texas Kitchen & Beer Garden in “The Shack at JAXON”, located in the beer garden area. Bobber’s will serve up sandwiches, dogs and Dole Whip in The Shack at JAXON for lunch and late-night.

The Second Floor at The Exchange will become Attalie, the food hall’s rotating chef concept and private dining area. The first guest chef is Misti Norris who will take over the space from June to July with a concept called Stepchild. The concept will serve dinner Thursday – Sunday.

Ichi Ni San, previously located on the second floor, will move down to the first floor with a rebranded concept, Ichi, serving up poke bowls and sushi.
