Charlie Pap on Hiatus

Charlie “Pap” Papaceno, partner at the beloved Industry Alley in the Cedars of Dallas (think Lamar just south of downtown) is taking a haitus from his bar duties to tend to family business in New York, but retaining his ownership while leaving the bar in the hands of a very capable couple.

As former partner at the Windmill Lounge he garnered national attention for his clever cocktails. He is considered the leader in the Dallas craft cocktail movement.

Picking up the slack while Papaceno is on hiatus will be Marty and Jen Reyes.  The couple are known throughout Dallas for the Swizzle Luau Lounge Tiki Nights, are service industry lifers, tikiphiles and bar culture enthusiasts.   Continue reading

Suerte Tequila Sponsors Epic Cinco Fiesta at Industry Alley on Friday, May 5th, featuring $5 Suerte cocktails, serving $5 taqueria style pork tacos by Justin Holt, mariachis, and piñatas.

One of the many legends surrounding tequila is that it was originally discovered by luck. Well, actually it was by a rabbit. Or rather by a farmer’s wife who noticed the rabbit getting tipsy on fermented agave. Dallas $10k for Kids Event Benefits Texas Scottish Rite Hospital for Children

I love it when chefs band together for a common cause, benefiting a great group, raising a significant amount of money and as a side benefit we all dine well. There are no losers in this equation. Last year an Elite Chef Quartet including John Tesar, Graham Dodds, Nick Amoriello, and Daniel Pittman raised a significant amount of funds for St Jude Children’s Research Hospital at an event titled Dallas $10k for Kids produced by local personal chef Noelle Hendrix.   Continue reading

Scenes From Industry Alley Opening Night

Industry Alley opened last evening to a rousing crowd that included the elite of the bartending community, plus plenty of civilian supports wishing to kick off the bar opened by Charlie Papaceno.

We were on the scene to check out the toddling time which included time at the pool tables, dart board and a smattering of retro video games that filled the large back room of Industry Alley. Consider this an adult playground with all the accouterments, including fine cocktails and brews. The new bar does not have a kitchen in house, so takeaway from neighboring restaurants is acceptable. In a show of support Zalat sent out a fleet of pizzas for the crowd to enjoy which was much appreciated.   Continue reading

Industry Alley Soft Opens This Sunday

If you have been anticipating the opening of Industry Alley, that wait is over. Last week owner Charlie Papaceno received his official certificate of occupancy from the City of Dallas, the last of the legal hoops one needs to jump through when opening a bar or restaurant. Papeceno told craveDFW that he will open his doors this Sunday through Wednesday from 4pm to 2am as a soft opening to put his fresh staff to the test.    Continue reading
