One of our most favorite cocktailiers in Dallas can be found behind the stick at Central 214 in the Palomar Hotel. Amber West draws much of her inspiration from what is growing around her. Be it in a few solitary pots she has hidden across the hotel campus, or those found in her secret garden at home. What is fresh, what is now, is what the young bartender finds most exciting.
After reading Andrew Chalk’s write up on a recent dinner he experienced at the hotel restaurant, we set out to have a taste of our own. Graham Dodds is up to his usual shenanigans in the kitchen, and we have even more to report about his new menu, but we also had a chance to usher Ms. West away from her confines to the Palomar patio for a brief visit. If you did not tune into craveRADIO this past weekend, you missed a lot. We just finished our fifth show and the guests are lining up to join the fun. Last Sunday we featured chef Graham Dodds from Central 214 in Dallas, along with his bar manager, Amber West.
Chef Dodds can be a bit shy at times, probably stemming from his conservative British and Scottish roots. But that was soon remedied as Amber West invited us all to taste her cocktails that she had been cask conditioning. The Equestrian is a playful take on the Mint Julep, something she conjured up in anticipation of the Kentucky Derby. As we have reported in the past, changes have occurred at Central 214 with the addition of Graham Dodds in the kitchen bringing his own remarkable spin on the farm to table cooking. Along with his wonderful menu (and we take a look at the latest incarnation of this menu early next week) Dodds also recruited a special bartender, Amber West.
West comes from an incredible culinary family. You may recognize her brother Adam West most recently at ZaZa’s Dragonfly in Dallas, and since promoted as the executive chef at Monarch in Houston. Both siblings in the West family appreciate farm fresh ingredients and seek them out with enthusiasm. Continue reading
