We have confirmation that Julio Peraza left Salum/ Komali and is now exec at Proof+Pantry. The classically French trained chef Peraza is said to be heading up the kitchen at the soon-to-open Madrina owned by the same group that operates Proof+Pantry.
Abraham Salum, owner of both Komali and Salum said that Peraza’s last day at Komali was yesterday.

Proof + Pantry’s Chef Kyle McClelland has put together a brand new lunch menu, perfect for summer. Guests can still enjoy Proof + Pantry’s lunch favorites such as the Pantry Burger and Lobster Roll, while new features include the Fried Oyster Roll with celery root slaw and tartare sauce; Baked Eggs with roasted cauliflower, ham, spinach, gruyere cream and tomato sauce; and Roasted Beets with black plums, mixed radish and queson ibores.
Proof + Pantry serves lunch Monday through Friday, from 11:30AM to 2:00PM.

Certainly best known for the amazing cocktails, Proof and Pantry also has this fantastic dining menu that is power packed with large plates that are ideal for sharing. From the massive Strube Farm Long Bone Ribeye that is suggested to feed three or four adults, to the Whole Fish that will easily satisfy a couple, the menu is a fun read for those looking for something a bit out of the mundane.
