Chef John Tesar, a four-time James Beard nominated chef, and a two-time contestant on Bravo’s “Top Chef”, has signed a lease at Laguna Cliffs Resort & Spa in Dana Point, CA to bring his renowned seafood reputation to the West Coast. The restaurant will be called Outer Reef and will feature Tesar’s interpretation of coastal seafood, using fresh California produce and seafood sourced exclusively from the West Coast, from Baja to Alaska. One of Dallas’ most prolific chefs, John Tesar, will be appearing at the Granada Theater this Saturday performing a cooking class that includes a marvelous spread prepared by the Top Chef.
Tesar has been busy appearing on not one but two seasons of Top Chef and numerous other cooking programs, is owner of Knife one pretty fantastic steakhouse in Dallas, soon to open in San Francisco and in Plano. He also has a burger concept about to open in Plano which will most likely kill your desire for any other burger in Dallas. He also recently released his best selling book also called Knife. Wait, it’s not Tuesday. We can’t possibly do a taco story today, or can we? Yes we can, especially with a little number like this presented by Tacos Mariachi who pays an homage to Top Chef contender John Tesar.
The John Tesar Taco is a flour tortilla, charred tomato salsa, avocado, toy box pico and jalapeño tomatillo cream. Sounds legit and we happen to be on a relleno binge at the moment. Continue reading

For those of you following the many activities of John Tesar you would have noticed that he is one busy chef and in great demand. When the chef is not busy rocking Knife, his kick ass steakhouse in Dallas, or doing one of the many charity events he is so popular for, or his second coming on the current season of Top Chef, Tesar is is still not satisfied.
We noted some time ago that Tesar is also adding another restaurant to his menu in the form of a burger stand in Plano next year. But for a real slice of the chef you should check out one of his pop-up ventures where he has been recreating his beautiful but shuttered seafood restaurant, Spoon. Continue reading

The food lords of Dallas were taken aback recently when Tre Wilcox resigned his post two years after he opened the kitchen at Marquee in Highland Park Village. Wlicox comes to us with an amazing pedigree named as the James Beard Foundation’s “Rising Star Chef” for two consecutive years, and appearing on Top Chef Season 3 and the All Star Season 8. On any given night Wilcox could be found working the line in his own kitchen at Marquee rather than playing up his celebrity status.
Wilcox claimed he wanted to spend more time with his family and offer cooking classes in his home, and the man has been doing just that. Continue reading

I do not normally report on the whole Top Chef thing, we always assume our readers are out dining or sipping an amazing tequila, or hob knobbing with a few local bands on their day off. At least that is how I envision you all. However, this season has been particularly interesting with the addition of three talented local chefs.
Be there no doubt that I was all upset when Danyele McPherson from The Grape took her leave from the show just weeks ago. Danyele is talented, perky and a whole lot of fun. I met her first working with McCallister back at Stephan Pyles, and instantly took to her radiant personality. She is a class act and Top Chef could use a few more Danyele’s. Continue reading
