One Art in Commissary Opens Tonight

Today marks the opening of The Commissary’s  restaurant-within-a-restaurant One Art. We were fortunate to be part of the few to preview some of the offerings that the new restaurant will offer and will share the photos below.

It is interesting to note that unlike the One Art predecessor, The Table, there will be a few changes. One notable change is price. Chef-owner John Tesar noted last evening that the all night multi-course room wasn’t as successful due to the economy, and scaled the menu back by lowering price points, offering an ala carte menu, and sticking to more basic ingredients rather than the foie and caviar heavy approach he had before.    Continue reading

Tei An Sake Dinner

North Texas’ only Advanced Saké Professional is teaming up with its most well-regarded Japanese chef to present a celebration of “Nihonshu no hi”, the annual opening of the saké brewing season in Japan.

On Sunday, Oct 2nd at 7pm, Hung Nguyen teaming up with Teiichi Sakurai and the Tei An staff to present a special dinner of authentic and progressive Japanese cuisine, paired with saké. The emphasis this year will be on saké from the Tohoku region, which was devastated by disasters earlier this year. The overall effect of those events on the quality and availability of Tohoku saké won’t be known until at least next year, so they will  savor the 2011 brews while still able. As a side note, they are drinking brews produced prior to the disasters–there should be no contamination concerns.   Jump for menu… Continue reading

Best Sandwich in Dallas Today

One of the absolute best things that I have eaten in months is made by bad-boy chef John Tesar of The Commissary. The Commissary makes a great option for those in the Arts District wanting a late night nosh and is one of the most solid values found in downtown Dallas. There you can find a chef-driven five dollar burger that satisfies and lifts the spirits.

Recently I found an item on Tesar’s special board that I probably would not have necessarily ordered had sommelier Scott Barber not insisted I try the sandwich. He stood next to me and said, “Seriously… order the Pork Belly BLT. Seriously.”  Continue reading

Down the Hatch

Next to Christmas, opening day of the State Fair, and that new-car smell, one of my favorite things in the world is Hatch Green Chile Season. It’s a brief time of year when one of the best food-enhancers in the world reaches its peak. From local grocery stores roasting the fiery suckers to restaurants creating hot new menu creations, Hatch Chiles are a thing of culinary beauty.

And Jorge’s in One arts Plaza is keeping things fresh and simple with two new menu items highlighting the pureness that is Hatch. What I wasn’t expecting was a cavalcade of cocktails courtesy of Nacho, the creative genius behind a new era of creativity behind the Jorge’s bar. The drinks just kept coming. And coming. Camarena Tequila Brings Free Tacos to DFW

Two undisputed facts about Texans. We love tequila and we love tacos. This makes today’s news of the Camarena Tequila Taco Truck moving into the Dallas area so incredibly sweet. As the truck was making its way into the DFW area, the brand selected to work with the Commissary in One Arts Plaza as their local ambassadors. Almost daily you will find Commissary sous Phillip Vorkoper working the truck at various events across the city including Cowboy’s games, festivals, concerts and such. You will also see chef John Tesar making his brand of tacos in the truck quite a bit.       Continue reading
