Patrick Russell Named Executive Chef at Patrizio

Patrick Russell was recently named Executive Chef of Patrizio. Chef Russell trained at The New England Culinary Institute before moving back to his hometown of Dallas. After graduating from the culinary institute, he worked at Craft Dallas for nearly four years, starting as an intern and moving his way up to sous chef, then eventually was named Executive Chef for Max’s Wine Dive where he helped open several locations for that company and acted as Exec for the Uptown location where he made his mark on the culinary scene with his innovative dishes.

Chef Patrick Russell will be working directly with Chef and Operations Manager Ryan Carbery who opened the Uptown location of Patrizio. Continue reading →

Patrizio’s In Fort Worth Closed Again (For Good This Time)

Almost forgot to mention this as we lock up the crave offices for the week. Patrizio in Fort Worth has shuttered once again. The area is plagued with high rent that hasn’t quite panned out the way many had hoped. The employees are on the losing side of this equation. Do not look for another miraculous re-open.

Patrizio Fort Worth Closed *Update

We learned this weekend that the Fort Worth version of Patrizio shuttered after being locked out by the landlord. Owner Ed Bailey was in the midst of renegotiating the lease when they received word Saturday that the building had been locked up for non-payment of rent.

The Fort Worth store was located at 2932 Crockett Street. This closure does not affect any other Patrizio locations.

*Update: The Fort Worth location is back in business.

The Demise of Bailey’s Prime Plus

Last week Ken Kuczwaj invited me to have dinner at the last Bailey’s Prime Plus located in the Shops at Park Lane. During dinner we chatted about how each location had closed, and that the last Bailey’s steakhouse would shutter January 1, 2012. It was a bitter, sweet meal we enjoyed as we savored the last remnants of our Wagyu tomahawk.

Bitter, because the restaurant was actually very good. Chef Ryan Carbery is quite talented and his hand in the kitchen will be missed.   Continue reading →

Bailey’s In Fairview Will Close (And Cedar Hill)

Yesterday rumors sparked that Bailey’s Prime Plus in Fairview was closed and later in the day the rumor was squelched. The restaurant did close for the Labor Day holiday leading some to believe that there was indeed a closure. We went to the source to do a little discovery. What we found was more than interesting.

“We are investigating closing down the Cedar Hill and Fairview locations for Bailey’s Prime Plus,” said Ken Kuczwaj, a Bailey’s management representative. “We have a national tenant wanting to take over the location in Fairview. To accommodate the landlord we will most likely bow out.”   Continue reading →
