Almost a year ago Richard Gras was named the replacement chef after Oak’s glory chef Jason Maddy left his post. Maddy hightailed it to the Cayman Islands where he seems to be enjoying life. Yesterday Richard Gras tendered his resignation, and the job was filled by sister restaurant executive chef Brian Zenner.
Zenner was in craveDFW news earlier this week as we covered his Sea to Table dinner at Belly and Trumpet, which was nothing short of wonderful. Zenner has the talent, and is a very obvious choice to take over the reigns in the flagship kitchen. Zenner will continue to oversee the kitchen at Belly & Trumpet, which is located just two miles from Oak.
“We are excited to welcome Zenner back to Oak,” said Richard Ellman, co-owner of Apheleia Restaurant Group, along with his wife Tiffanee. “The restaurant has a bright future ahead with Zenner at the helm, and we anticipate this move bringing Oak to new heights within the Dallas dining scene.”
We couldn’t agree more, and congratulate chef Brian Zenner.
