When preparing for Texas Chicken Fried Steak Day I reached out to a handful of chefs to get their take on the day, and to uncover where the pro’s find their fix of cream gravy. How Jeffrey Yarbrough Grabbed His Place in Texas Chicken Fried History

Each year we celebrate October 26th as Texas Chicken Fried Steak Day, and we do so by one of the state’s sons, Jeffrey Yarbrough.

How To Celebrate Texas Chicken Fried Steak Day

God love Jeffrey Yarbrough. Yarborough is one of the strongest supporters of restaurants in Dallas, and when the man decided that there needed to be a holiday that celebrated what should be our state dish, chicken fried steak, he went to Austin to do something about it. This is why every October 26 we celebrate Texas Chicken Fried Steak Day as proclaimed by the Texas Legislature.

For most of us we didn’t need a proclamation, but how fun is it that it is all nice and official like. It sort of mandates the fact that we cannot go the day without sampling at least one platter of gravy soaked fried meat.        Continue reading

Eat Me: The Snookies Burger

In 1989 when Gene Street Jr. and Dace Street opened Snookies on Oak Lawn they most likely had no idea what an institution the bar would become. To this day they serve up one of the better chicken fried steaks in the old family Street tradition.

Checking in at Snookies recently with a hankering for one of their fine chicken fried steaks, a true plate hanger with a smooth and creamy gravy dotted with the appropriate amount of cracked black pepper, I was diverted by one of the long time staffers, Caroline Belfour who insisted I try out the burger. She waxed gingerly how the hand formed meat patty and all the accouterments were made in house. This included a special spicy sauce that should be doused into the catsup for an extra tang with the hand-cut fries. Continue reading

Horseshoe Hill Cafe Opening in Stockyards

I met up with elusive chef Grady Spears over the weekend to check out his new endeavor in the Fort Worth  Stockyards, Horseshoe Hill Cafe. At the moment it’s not much from the outside and even less to look at inside. Construction is underway and he expects to be complete and open in about six weeks. Chef Spears is planning for this to be a much more casual atmosphere than his previous restaurants.  Continue reading

There’s Something About Mary’s Cafe

As we continue to celebrate Texas Chicken Fried Steak Day we wanted to pay homage to the very best Texas has to offer. To find Mary’s Cafe  you will need to barrel west on I20 to Strawn, Texas. Strawn is about 90 minutes from Dallas, but well worth the drive.  This made our jumbo list of CFS, and once you savor the flavor you will understand why.

One a recent visit we pulled in curbside 30 minutes before Mary opened her doors, but were invited in none the less once she spotted us sitting in our car. Our waitress was busy making her tables ready and offered up a tall glass of iced tea she had just brewed, and that took some of the road dust off our palates as we stared down the menu.          Continue reading
