Cochon555 Dallas promises to be a fantastic event featuring a half-dozen heritage breed pigs cooked or butchered by local champions of the good food movement. The event starts with 5 amazing chefs, Host Chef Christof Syré of Law at Four Seasons Resort and Club Dallas at Las Colinas, David Uygur of Macellaio, Bruno Davaillon of Bullion, Matthew Scott of Great Scott, and Josh Bonee of Fine China, in a friendly culinary competition where you, as a guest, get to cast  vote for the best bite of the day. Five chefs, five pigs and five winemakers are ready to create the Dallas food ultimate experience for the first time since the competition’s inception.
Cochon555, a nose to tail competition, was created in 2008 in response to lack of education around heritage breed pigs. The event is also dedicated to supporting family farmers and educating chefs and diners about the agricultural importance of utilizing Old World livestock. Continue reading

Chef David Uygur of Lucia and Yutaka Yamato of Yutaka combined their many talents on Sunday evening for the second Valentine’s dinner in as many years. The previous event took place at Lucia, so this time it was Yutaka’s turn. When asked about the inception of the event, Uygur said “We both love dining at each others’ restaurants, so it makes perfect sense”. Justin Holt of Lucia also took place in the creation and execution of the dishes.
The six-course menu was paired with wine and sake and featured a sorbet course served on an illuminated ice block while all the lights in the restaurant were turned off.

The James Beard Foundation (JBF) announced today that for the second year in a row it will present the James Beard Foundation’s Taste America, a national epicurean tour celebrating America’s culinary diversity. From September 12 through October 25, 2014, the program will stop in ten cities over five weekends, including Atlanta, Boston, Chicago, Dallas, Los Angeles, New York City, Phoenix, San Francisco, Seattle and Washington, D.C. Each city will enjoy a special evening that starts off with a walk-around tasting reception from a line-up of local chefs, followed by a one-night-only, collaborative four-course dinner crafted by a Taste America All-Star and a local celebrity chef.
