The sous chef at Boulevardier won the great Chefs for Farmers competition last weekend and now the restaurant wants to celebrate. Tonight, and through Saturday, GMO Tristan will be serving the winning dish as a small plate.
The dish is a Moroccan glazed lamb loin on a bed of roasted carrot hummus, with a North African salad of fried garbanzo beans, cumin almonds, preserved lemons, drunken raisins, and peas drizzled with lemon confit.
“My inspiration is a lot from my past, but I actually wanted to make something that I would eat myself if I was going out,” said Tristan just after the competition.
In addition, Boulevardier will offer specialty cocktails tonight from 9pm to 11pm for $5 and all beer and wine by the glass will be half price.
