craveRADIO: Meet Chef David Holben And Sander Wolf From The Dallas Chocolate Conference

If you missed last week’s broadcast of craveRADIO you are in luck. We have the replay at the bottom of this page waiting for you to listen in. We had in studio the chef from Del Frisco Double Eagle Steakhouse, David Holben, who taught us the finer points of beef including how it is aged, prepared and enjoyed. We also ran through Holben’s austere work history and how he became a chef. This is always interesting to us, and love to see how the most successful chefs started their career. It is never the same.

Holben also discussed the new Del Frisco Grilles that are popping up all over the planet. What a fantastic concept.

Also we had on the director for the Dallas Chocolate Conference and Festival,  Sander Wolf on the show. Sander discuss the very cool conference that takes place October 26 at the Addison Conference Center (buy your tickets here for a mere $20). Wolf discussed how the conference came to Dallas, and mentioned the various chocolatiers that he was hosting. he even snagged a few for us to chat with including Kate Weiser, who is opening her own shop very soon in Trinity Groves, and Troy Easton from Sublime Chocolate. We always enjoy chatting with Kate, and adore her truffles that are more art than anything else. They also happen to taste wonderful.

Easton is located in Allen where he is actually doing the only bean to bar chocolate in the area. His truffles are heavenly. Try the pecan pie chocolate.

During the sweetest weekend in Dallas, Dallas’ best chocolatiers will display and offer their finest delectable morsels while attendees will learn from some of the best names in chocolate including: James Beard award-winning author, chef, and culinary historian Maricel Presilla; Valrhona Chocolate Pastry Chef Derek Poirier; and Dallas’ own Spoon Pastry Chef David Collier. This year’s Conference also includes two limited space hands-on chocolate workshops on Sunday, Oct. 27, a bean-to-bar workshop led by Scott Moore, Jr. (Tejas Chocolate) and Alice Nystrom (Dandelion Chocolate); and a special chocolate desserts class led by Derek Poirier and David Collier.
