Unleavened Fresh Kitchen Opens Sept 22nd

Unleavened Fresh Kitchen, an upscale fast casual restaurant with a focus on wraps and salads, will open Tuesday, September 22nd for breakfast, lunch and dinner and is located at the Lakewood Shopping Center at 1900 Abrams Parkway.

Offering lunch and dinner options such as the Unleavened (chicken salad, currants, golden raisins, celery, chia, leaf lettuce, shaved carrot, garden sprouts and tomato) or the Weekender (buttermilk fried chicken, pepper bacon, leaf lettuce, tomato, shaved carrot, green onion, Boursin spread and ranch dressing) are available as a wrap or salad. And, breakfast items including the Dagwood (pepper bacon, egg, potato, arugula, shaved cheddar) or the Market Offer (veggie sausage, egg, garden sprouts, tomato, spicy avocado) can be ordered as a wrap or in a bowl on potato hash accompanied by fruit.

Hummus, roasted eggplant, cucumber dill and other dips are made in-house and served with house-made chips or raw veggies. Other complements include items such as the quinoa & farro salad, the hoppin’ juan and grilled sweet corn. A la carte breakfast items include house-made granola, quinoa porridge, acai bowl, split grapefruit brulee and more.

Bottled and canned beers (with an emphasis on local brews), a rotating lineup of wines on tap, mimosas and other seasonal drinks will also be offered. The 1800 square foot restaurant seats 46 inside and 42 on the café-style outdoor patio.

Meet the Owners

Tom Dynan is a self-taught chef with 15 years of hands-on experience in the food and beverage industry. He brings a strong focus on restaurant operations and management. His extensive skills include menu development and design, concept development and execution, human capital management, financial planning, and procurement. Dynan’s resume includes several executive and culinary positions with Marriott International, Gaylord Hotels, The Ritz-Carlton Hotel Company, and several other well-respected hospitality companies ranging from quick service to fine dining. He lives in Lake Highlands with his wife and daughter.

Scott Piland’s background is in real estate investing through individual portfolio management and private equity funds. He provides extensive experience in real estate valuation as well as capital structures. His responsibilities include capital partner relations, financial institution interface, real estate procurement and negotiations, financial forecasting and reporting, and brand development. Piland was most recently a Director at E2M Partners, a real estate private equity fund management company. He also maintains an active role on the board of The Rosedale Group, a non-profit organization he co-founded and lives in Lakewood with his wife and two daughters.
