Longtime fine dining destination, Abacus, is pleased to announce a couple of key hires and a promotion as the culinary team continues to attract and develop talented chefs under Executive Chef Chris Patrick. With a new menu in place, updated bar lounge, refreshed table top and several new faces in the kitchen, there’s never been a more exciting time to dine at Abacus.
Tim Sablick has been promoted to Executive Sous Chef, where he serves as Patrick’s right-hand man in the kitchen. Sablick’s experience dates back to his time as a Line Cook at Jasper’s in 2010. He joined Abacus as a Sous Chef in 2014, and has become an invaluable asset to the team.
Taking over the Sous Chef role is Chad Bowden, a DFW-area veteran who served as the Executive Chef of Rockwall’s highly-rated Culpepper Steakhouse since 2007. There, his modern menu featured wild game, dry-aged steaks and seafood as well as an award-winning wine list. Bowden brings a wealth of culinary and management experience to Abacus, where he can showcase his skills in a new forum.
Pastry Chef Cessy Mendoza comes from Las Vegas where she worked as a Pastry Cook and Assistant Pastry Chef at Nobu, one of the world’s most celebrated restaurants. Now she’s bringing her creativity, technical precision and strong knowledge of global flavors to Abacus. With Mendoza on board, diners can look forward to new innovations on the dessert menu, as Abacus looks to captivate its patrons from start to finish.
