Alex Vu taught himself to fix an espresso machine by watching videos online, working the equipment at his family’s Vietnamese restaurant, V’s House, in North Richland Hills. That repair job turned into a real obsession with dialing in a cup of coffee, and it’s the reason a new specialty cafe called Kilo is set to open this summer at 6600 Snider Plaza, Suite 110, right next to the new Sueño location.
Kilo is a five-person project built entirely out of one family and its circle of friends. Alex runs it with his siblings Victoria and Ryan Vu, along with Anthony Nguyen, who worked alongside them at V’s House, and Bao Nguyen, who brings a media and creative production background to the shop’s branding and presence. Victoria studied nutrition at Texas A&M and is shaping the food side of the menu, a compact lineup of grab-and-go sandwiches, puff pastries, salads, power bowls, and overnight oats built to pair with a deliberately slow cup rather than compete with it.
The name comes from the same instinct that got Alex into coffee in the first place: obsession with precision. Every drink on the menu is named for its exact weight rather than a cute coffeehouse title. The .214, weighing 214 grams, blends orange, nutmeg, vanilla, espresso, and a house milk mix. The .283 runs homemade Earl Grey syrup and lemon zest through an espresso tonic. It’s a small, specific detail, but it signals exactly the kind of shop this is: one where a cup gets built to a number rather than eyeballed.
The bar itself centers on a rotating pour-over program with roughly ten single-origin coffees available at any given time, backed by a full espresso bar and staff trained specifically on extraction rather than just steaming milk. The team tested the concept at pop-ups in Snider Plaza and along the Katy Trail earlier this year, both of which reportedly drew strong crowds, giving the group real feedback before committing to a permanent lease.
No firm opening date has been set yet. Kilo’s own site still lists “Summer 2026” without a specific day, and the fastest way to get notified is joining the mailing list at drinkkilo.com. Once open, hours are set for 7 a.m. to 7 p.m. daily, putting it in direct company with Sueño’s tequila lounge, Alma Agave, and the rest of Snider Plaza’s fast-growing food and drink lineup right by SMU.
