2018 Best Chili Finds in DFW

We have written about the history of chili, and Dallas is definitely a large part of that. The original Tolbert’s downtown served some of the best chili that could be found on the planet. Also the original Chilis’, the chain that can be found just about anywhere, opened over 40 years ago by Larry Lavine at the now-defunct Greenville Avenue and Meadow location served fantastic chili back in the day, with a recipe inspired by the first chili cook-off in Terlingua.

One of our favorite’s comes from Graham Dodds and I am sure we will be tasting his new bowl of red at his new post as Exec chef at the Statler Hotel.

Katy Trail Ice House Offering New Items On BBQ Menu

Katy Trail Ice House is known for many things. Their convenience to the trail, a collection of absolutely beautiful people to people watch while enjoying one of many tap brews, a damned good burger and BBQ. Wait, BBQ? Thursday through Sunday while it lasts, yes BBQ.

Recently we checked in with pitmaster and kitchen manager Eduardo Flores at Katy Trail Dallas and he showed us around his pits and even invited us into his kitchen for a burger. I am pleased to report that there are more chili offerings this year than last, and many have upped the ante in developing a perfect bowl. Katy Trail’s BBQ Business Is Growing At An Amazing Rate

One of the most underrated spots in Dallas for barbecue is at the Katy Trail Ice House. They are quite literally going through hundreds of pounds of turkey, ribs, brisket and sausages each week with Eduardo Flores sitting as pitmaster each weekend. That’s right, the barbecue was originally set up to ease the mad rush of food orders on the weekends, but with Flores at the smoker the ‘cue has taken off on its own and is always a sellout by early Sunday afternoon.

“We smoke the brisket for about 18 hours, we do the ribs for 12 hours, turkey 12 hours, and we do sausages and chicken as well,” said Flores during a recent interview.  Continue reading
