Katy Trail Ice House Offering New Items On BBQ Menu

DSC01891by Steven Doyle

Katy Trail Ice House is known for many things. Their convenience to the trail, a collection of absolutely beautiful people to people watch while enjoying one of many tap brews, a damned good burger and BBQ. Wait, BBQ? Thursday through Sunday while it lasts, yes BBQ.

Recently we checked in with pitmaster and kitchen manager Eduardo Flores at Katy Trail Dallas and he showed us around his pits and even invited us into his kitchen for a burger. Exciting day when you are able to score a pass into a busy kitchen such as Katy Trail on a Saturday afternoon. Continue reading

I am pleased to report that there are more chili offerings this year than last, and many have upped the ante in developing a perfect bowl. With temperatures dipping into freezing ranges in the coming month, what a perfect opportunity to go out and taste a bowl for yourself.    Continue reading

That’s right, the barbecue was originally set up to ease the mad rush of food orders on the weekends, but with Flores at the smoker the ‘cue has taken off on its own and is always a sellout by early Sunday afternoon.

“We smoke the brisket for about 18 hours, we do the ribs for 12 hours, turkey 12 hours, and we do sausages and chicken as well,” said Flores during a recent interview.  Continue reading

Two New DEBC Beers Premiering This Month

Deep Ellum Brewing Company will launch two brand new beers to the market starting July 31st – one is a seasonal and one will join the year-round lineup for DEBC.  Yes, “Wealth and Taste” is a Rolling Stones reference (but also an homage to the originator of this style of beer – Duvel.  Duvel actually means devil in Flemish) and is a seasonal batch.  It was built in two 30 barrel batches – one batch was aged in Chardonnay barrels and one batch went through the normal fermentation process then they were blended together to get the balance they were looking for.  Continue reading
