11 Hot Spots In Dallas For Chili

chili1by Steven Doyle

A true bowl of Texas red is near and dear to me, and I am always willing to order a bowl if found on any menu I stumble across. I am pleased to report that there are more chili offerings this year than last, and many have upped the ante in developing a perfect bowl. With temperatures dipping into freezing ranges in the coming month, what a perfect opportunity to go out and taste a bowl for yourself.    Continue reading

Katy Trail’s BBQ Business Is Growing At An Amazing Rate

DSC08467by Steven Doyle

One of the most underrated spots in Dallas for barbecue is at the Katy Trail Ice House. They are quite literally going through hundreds of pounds of turkey, ribs, brisket and sausages each week with Eduardo Flores sitting as pitmaster each weekend. That’s right, the barbecue was originally set up to ease the mad rush of food orders on the weekends, but with Flores at the smoker the ‘cue has taken off on its own and is always a sellout by early Sunday afternoon.

“We smoke the brisket for about 18 hours, we do the ribs for 12 hours, turkey 12 hours, and we do sausages and chicken as well,” said Flores during a recent interview.  Continue reading

Two New DEBC Beers Premiering This Month

Deep Ellum Brewing Company will launch two brand new beers to the market starting July 31st – one is a seasonal and one will join the year-round lineup for DEBC.  Yes, “Wealth and Taste” is a Rolling Stones reference (but also an homage to the originator of this style of beer – Duvel.  Duvel actually means devil in Flemish) and is a seasonal batch.  It was built in two 30 barrel batches – one batch was aged in Chardonnay barrels and one batch went through the normal fermentation process then they were blended together to get the balance they were looking for.  Continue reading

Katy Trail Ice House Has Awesome Barbecue

by Steven Doyle

We recently ran across Jimmy Fell, the general manager over at the Katy Trail Ice House. You will know Fell most recently from Red Dog Right in Grapevine, but most prominently when he worked for Jim “Sevy” Severson at his namesake restaurant on Preston. Fell was excited to talk about the latest addition to the menu at the Ice House, and how it has drastically improved not only the cuisine but what can be long wait times for the food to arrive at your table.

Enter a giant behemoth of a smoker that is a bit displaced for the moment while the owners build a shed complete with its own exhaust system on the property. Until then, the smoker is located about a block away in a parking lot owned by Katy Trail Ice House.         Continue reading
