From the world of press releases we find this in our in-box today. Pegaso has been reported as Monica Greene’s new restaurant, but in actuality Miss Monica is consulting partner on the project. As a fast casual concept it looks mightily like BEE (Best Enchilada Ever) in Oak Cliff was. You remember BEE, the fast casual build-your-own burrito bar. Miss that place, because thy were pretty damned good enchiladas.  Anyway, on to the press release business.  

Pegaso Mexican Diner, a ‘Mex and Tex’ comfort food restaurant that specializes in handmade enchiladas, is ready to feed the Fort Worth community with their grand opening on August 19, 2014. The space, which highlights natural wood décor and vintage Fort Worth memorabilia, is located at Fort Worth’s Bluebonnet Circle near the TCU campus.

Citing influences from Mexican and Southwest Tex-Mex cuisine, Pegaso’s menu allows for complete customization for their guests. Chefs will prepare signature enchiladas, burritos, tortas and tacos right in front of customers in the queue line, relying on natural flavors from high-quality ingredients and the abundance of fillings and sauces they can provide. A unique selection of craft beers, wines and house-made margaritas bring the Pegaso fast-casual culture together, providing an additional outdoor patio and pick-up window for local families and students who want a sit-down meal with friends or a grab-and-go bite to eat.

Committed to the Fort Worth community, Pegaso aims to provide personalized experiences for each and every guest. This philosophy was developed by Pegaso’s operating partner, Jay Coates, with help from menu developer and consulting partner, Monica Greene. The goal is to grow the restaurant internally, providing a friendly and attentive staff that know their customers and can serve delicious, high-quality Mexican cuisine at a quick pace.

“There was significant thought and care in choosing the location of our flagship restaurant,” said Jay Coates, Pegaso CEO and Operating Partner. “The city of Fort Worth has done an incredible job with the projects around town and once we were introduced to the community surrounding Bluebonnet Circle, we knew this was where Pegaso would create its first hoof print.”

Pegaso is located at 3516 Bluebonnet Circle, Fort Worth, TX 76109. The restaurant will be open 365 days a year, with hours from Sunday-Thursday at 10AM – 10PM, and hours Friday and Saturday from 10AM to 2:30AM.
