A Culinary Journey at the State Fair of Texas

by Tanya Fleming

The State Fair of Texas is more than just a place for rides and livestock shows; it’s a food lover’s paradise where innovation meets tradition. This year, I dove into the delicious new offerings that had my taste buds dancing with delight. From savory to sweet, here’s my culinary adventure through the fairgrounds.

My first stop was the Korean Corn Dogs booth located on Coliseum Drive. Corn dogs are a beloved fair food, but the Hot Cheetos Korean Corn Dog takes it to a whole new level. This beauty is a delightful hybrid of hot dog and mozzarella cheese, encased in a crispy batter made from wheat and rice flour, then coated in panko breadcrumbs and deep-fried to perfection. The moment I bit into it, the crunch was satisfying, followed by a gooey, cheesy interior that perfectly complemented the savory hot dog.

The real kicker? It’s topped with spicy mayo and a generous dusting of Hot Cheetos crumbs. The heat from the Cheetos gave it an exciting kick, making it one of the standout items of the fair. If you’re looking for a taste that’s both fun and delicious, this one’s a must-try!

Next, I headed to Crepes and Co. in the Tower Building, where the Fried Apple Cinnamon Crepe awaited me. Picture a golden, crispy crepe filled with luscious Biscoff cookie butter and sweet, caramelized apple cinnamon. The first bite was a harmonious blend of textures: crispy exterior, creamy filling, and tender apples. Topped with more caramelized apples, fluffy whipped cream, and a crunchy Biscoff cookie, this dessert was indulgent and utterly satisfying. It was like a warm hug in food form, and I couldn’t help but savor every bite.

I then stumbled upon So Eggciting Deviled Eggs, where I tried their Texas BBQ Rib Deviled Eggs. I’ve always loved deviled eggs, but this version blew me away. The classic creamy filling was elevated by the addition of smoky, tender barbecue rib meat drizzled in beer barbecue sauce. To add crunch and freshness, they topped it with crisp coleslaw. It was a perfect balance of flavors—smoky, tangy, and creamy—all in one heavenly bite. This innovative take on a classic is sure to be a crowd favorite.

At Smith Spot BBQ, I discovered a dish called “The Nephew,” inspired by the owner’s nephew. It features a warm glazed donut topped with tender brisket, gooey mozzarella cheese, and a drizzle of honey, finished with a sprinkle of powdered sugar. The juxtaposition of sweet and savory was brilliant; the warm, fluffy donut provided a perfect base for the rich brisket. It was indulgent and unexpected, leaving me wanting to return for seconds.

The Dumpling Experience was a delightful pit stop where I enjoyed their array of grilled dumplings. I opted for the pork and vegetable variety, which was grilled to a golden perfection and topped with fresh green onions and cilantro. Dipping it in the homemade barbecue sauce added an extra layer of flavor that was absolutely mouthwatering. Each bite was a reminder of the family tradition behind these dumplings, and the customization options made it a fun experience.

My culinary adventure wouldn’t be complete without indulging in some sweet treats. I stopped by Waffle Works for their Waffle Stix—warm, fluffy waffles on-a-stick dipped in rich Belgian chocolate and rolled in candy toppings. Each bite was a delightful explosion of flavors and textures, and I had a blast choosing my toppings.

Finally, I couldn’t resist the allure of Milton’s Amish Doughnuts. These Texas-sized sourdough doughnuts, dipped in sweet vanilla glaze, were heavenly. Watching them being made through the viewing window made the experience even sweeter. They were fluffy, flavorful, and the perfect ending to my fair food journey.

The State Fair of Texas continues to be a culinary celebration that showcases creativity and flavor. Each new food item I tried added to the tapestry of experiences that make the fair so special. Whether you’re a fan of classic fare or adventurous flavors, this year’s offerings are sure to satisfy every craving. So grab your friends and family, and get ready for a taste adventure at the fair.
