With over a decade of experience in cocktail and spirits development, dining, and events, Eric brings a deep passion for mixology and an impressive skill set to the elegant atmosphere of Ginger’s.
Most recently, Eric served as the Corporate Beverage Director at What If…Syndicate Hospitality, overseeing beverage programs for seven renowned properties, including Maple & Ash, Monarch, Kessaku, and Etta. Under his leadership, these venues achieved a remarkable $16.1 million in beverage sales from 2019 to 2022. Eric’s role involved creating signature cocktails, managing substantial budgets, and training staff in luxury service and beverage innovation. His exceptional work has garnered numerous accolades, including Thrillist’s “Top 5 Bartenders You Need to Know – Nashville” and Star Chefs’ “Chicago Rising Star Bartender 2021.”

Ginger’s boasts a sophisticated 1,200-square-foot lounge connected to Sushi | Bar, providing a luxurious space for guests to enjoy everything from high-pour martinis to negronis and margaritas—each served with a hint of theatrical flair. Designed by JonesBaker, the lounge features art deco details, U-shaped leather booths in rich shades of green, gold, and red, and a marble-topped walnut bar. The atmosphere is further enlivened by live musicians and DJs, making it an ideal spot for pre- and post-omakase cocktails or a relaxed evening out.
In his role as Bar Lead, Eric will curate seasonal cocktail menus, host exclusive events, and uphold Ginger’s commitment to delivering luxurious drinking experiences. Guests at Sushi | Bar will also benefit from a seamless transition from dining to sipping, with expertly crafted cocktails waiting for them at the refined lounge.
