Knife Italian Steak Presents a Signature Chappellet Wine Dinner with Chef John Tesar

Knife Italian Steak invites guests to an exclusive one-night-only Chappellet Wine Dinner on Thursday, June 12, 2025, featuring the acclaimed cuisine of Chef John Tesar paired with the award-winning wines of Chappellet Winery, one of Napa Valley’s most respected and enduring family-owned estates.

This intimate evening will showcase a luxurious five-course dinner served family-style, blending Knife’s signature dry-aged steaks with inventive Italian steakhouse dishes. Each course will be expertly paired with a curated selection of wines from Chappellet’s celebrated portfolio, offering a unique culinary experience that brings together bold flavors and sophisticated wines.

The evening’s menu includes:

  • Mushroom Pizza
  • Lobster Scampi
  • Oxtail Ravioli with Parmesan Monte, aged balsamic, and truffle
  • 60-day Dry-Aged Striploin and 120-day Dry-Aged Ribeye
  • Classic sides: mashed potatoes, creamed spinach, and mixed summer vegetables
  • Dessert: Flexi Chocolate Ganache and Mignardise

Wine pairings for the dinner include Chappellet’s signature Chenin Blanc, Grower Collection Chardonnay – Calesa Vineyard, Cabernet Franc, Pritchard Hill Cabernet Sauvignon, and Mountain Cuvée Red Blend. Chappellet Winery, founded by Donn and Molly Chappellet, has long been committed to sustainable farming, meticulous craftsmanship, and the preservation of Pritchard Hill’s natural beauty.
