May Happenings at Hotel Vin, Grapevine, The Ricardo Marriott, Hotel Mockingbird

Coury Hospitality has been quietly building one of the more interesting collections of hotels in North Texas — Hotel Vin in Grapevine, The Ricardo Marriott in Westlake, and the newly rebranded Hotel Mockingbird in Dallas. All three have something going on right now worth knowing about, and none of it reads like the usual hotel programming calendar.

Here’s what’s happening and when.

Hotel Vin — Grapevine

Route 66 turns 100 this year, and Hotel Vin is marking it with a package called the Ultimate Route 66 Pit Stop, available through June 20. It includes vintage-inspired snacks, a commemorative road map, a Texas wine tasting flight, a keepsake photo, and a photo opportunity with VIVINessa — a 1973 Cadillac Eldorado that lives on the property and is exactly as good-looking as it sounds. The WineYard Grille + Bar outdoor lounge has been dressed up accordingly, with vintage road-trip decor, Texas wines, and cocktail flights including one called The Driver vs Passenger Princess, which is either a conversation starter or an argument waiting to happen depending on who you’re traveling with.

Beyond the Route 66 programming, Hotel Vin has a full spring calendar running through the end of the month. On Saturday, May 16, the Plant & Sip Terrarium Brunch runs from 11 a.m. to 1 p.m. — a guided session where you build your own succulent terrarium to take home, starting with a complimentary glass of wine. No experience necessary, all materials provided. Tickets are $55 at hotelvin.com.

On Saturday, May 23, Bar Method brings a full-body outdoor workout to the WineYard from 9:30 to 11 a.m. Fifty spots, $33, bring your own mat and weights. Attendees get 20% off at Bacchus Kitchen + Bar after class. Honky Tonk Thursdays continue every other Thursday at 7 p.m. — free country dancing under the stars, with 20% off dinner at Bacchus before or after. And on select Sundays, Vinyasa at Vin pairs a yoga session with a complimentary Superfood Cocktail by Hendrick’s Gin and 20% off brunch. That one is $30.

Rioja After Dark brings live DJ sets, craft cocktails, and rooftop views to the Rioja Rooftop Bar on May 22 and May 23 from 9 p.m. to midnight. Free event, no tickets needed. Hotel Vin is at 215 East Dallas Road in Grapevine.

The Ricardo Marriott — Westlake

The former Marriott Westlake reopened earlier this year as The Ricardo Marriott, named for Mexican architect Ricardo Legorreta, who designed both the hotel and the surrounding Solana Plaza. It’s a more interesting building than most people realize — Legorreta’s work has a bold, color-saturated quality that doesn’t look like anything else in the area, and the renovation leaned into that history rather than away from it. New dining includes House of Toro Chophouse, the Black Pearl Lounge with tableside caviar service, and Solana Kitchen + Lounge for all-day dining.

On Saturday, May 16, the hotel is hosting Morning Pilates on the Patio from 10 to 11 a.m., led by Prayers and Pilates Studio. The $15 ticket includes a post-workout beverage, pool access, and 15% off brunch at Solana Kitchen + Lounge. Local vendor pop-ups will be set up alongside. Tickets are on Eventbrite. The Ricardo Marriott is at 1301 Solana Boulevard, Building 3, in Westlake.

Hotel Mockingbird — Dallas

The Beeman Hotel near SMU is now Hotel Mockingbird, part of Marriott’s Tribute Portfolio after a multimillion-dollar renovation that opened April 1. The property has 296 rooms, a covered pool, and two food and beverage venues. Verse Kitchen & Bar is the main restaurant, serving breakfast and dinner with a menu that covers Korean-style short rib sliders, cacio e pepe tagliatelle, miso butter salmon, and chicken Milanese, plus a full vegetarian menu. The cocktail program has a sense of humor — the house signature is called The Tequila Mockingbird, made with Tequila Blanco, Cap Corse Rouge, lime, blueberry jam, and habanero shrub.

Located behind Verse, accessible through a keypad-locked door, is Raven — a proper speakeasy lounge with dim lighting, craft cocktails at $20, and shareable plates. The Moto Taxi there, made with Trascendente Mezcal, Cappelletti, grapefruit, and Royal Combier, is worth ordering twice.

Every Wednesday from 8 p.m. to midnight, Raven hosts Industry Night — $10 bites and $14 cocktails, open to hospitality professionals looking for a mid-week place to land. No tickets, just show up. Hotel Mockingbird is at 6070 N. Central Expressway in Dallas, steps from Mockingbird Station.
