A Copper River Salmon Dinner Party

If you remotely follow the restaurant scene in Dallas you may know the name Royce Ring. He is the owner of Plan B, a design group that has turned out some of the more beautiful restaurants in our city such as Oak, Bolsa and Whiskey Cake to name a few.

Ring has a son with a different skill set entirely. Austin Ring operates Northwest Fish Traders in Alaska which is currently supplying the highly coveted Copper River Salmon to the very same restaurants that his father designed. The young fisherman was kind enough to fly us in a side of the beautiful catch, and it was up to us to find a way to make great use of the fish.    Continue reading

Copper River Salmon Season Starts May 15

We rely on a few local sources for a seafood knowledge, TJ’s Seafood Market in Dallas and Sea Breeze in Plano. Today Jon Alexis owner of TJ’s reminds us that it will soon be Copper River salmon season. Look for the delicious and rich fleshy fish with that creamy, omega-3 rich fat to start arriving May 15th. Alexis said he will wait a few days until the frenzy stops and the prices adjust to a normal price.   Continue reading

Copper River Salmon Extravaganza At Rathbun’s Was Insanely Good

Last evening we attended the Copper River Salmon and Alaskan Brewing Company dinner held at Rathbun’s Blue Plate Kitchen in Preston Center. Although the restaurant was filled to capacity, chef Kent Rathbun and crew found a way to squeeze in another 60 diners to sample some of this season’s best salmon. To top this night Rathbun invited a few friends in Scott Romano (corporate chef at Nick and Sam’s) and Matt McCallister (chef-owner of FT33).   Continue reading

The Great Copper River Salmon Race Of 2013

The battle of the Copper River Salmon has been crazy in Dallas. With the announcement from Matt McCallister (FT33) and Scott Romano (Nick and Sam’s) taking to the waters of Cordova, Alaska to procure their very own specimens. John Tesar (Spoon Bar and Kitchen) quickly lashed out that he was expecting his own shipment well before the chefs dipped their poles into the water. Continue reading
