Eddie V’s  who is known porimarily for their seafood has announced a gluten free menu for those watching gluten and for anyone gluten-intolerant. We see this as a trend in Dallas and recently heard Nick and Sam’s along with many other restaurants stepping up to add this feature to menus.  After the jump read the information sent into Crave today.

“At Eddie V’s Restaurants, we are addressing gluten allergies in a number of ways,” said John Carver, Executive Chef of Eddie V’s Restaurants Inc.  “First and foremost is properly educating the Chefs about gluten allergies and what food items and products pose a problem.  Second, training of all of our staff, cooks as well as front-of-the-house that cross-contamination can lead to food borne illness.  And third is responsible and safe preparation and cooking practices by utilizing separate utensils, measuring devices, food storage containers, and prep areas to safeguard against cross-contamination.”

Eddie V’s Gluten-Free Menu* Options abound from Ice Cold Shellfish  from the Raw Bar to many of the Eddie V’s signature and new menu favorites. Starters include Tartare of Ahi Tuna, Sweet Corn and Crab Chowder, Bacon Wrapped Shrimp, Wild Mushroom, Fuji Apple, Caesar and Heirloom Tomato Salads.  Prime Seafood options include Seafood Chopped Salad, Atlantic Salmon, Chilean Sea Bass, Gulf Snapper, North Atlantic Scallops, Jumbo Gulf Shrimp, Cold Water Lobster, and Market Fresh Fish.  Premium Black Angus Steaks, Oscar Style or with Lobster Tail and Roasted Double Breast of Chicken with Roasted Mushrooms are available. Celiac Disease (CD) is a lifelong inherited autoimmune condition affecting children and adults. When people with CD eat foods that contain gluten, it creates an immune-mediated toxic reaction that causes damage to the small intestine and does not allow food to be properly absorbed. Gluten is the common name for the proteins in specific grains that are harmful to persons with celiac disease. These proteins are found in ALL forms of wheat (including durum, semolina, spelt, kamut, einkorn and faro) and related grains rye, barley and triticale and MUST be eliminated.
