Each year the Caesar Salad Competition is the biggest event in the calendar of the American Institute of Wine and Food (AIWF) Dallas Chapter. This year’s event is October 26th at The Westin Dallas Hotel. As always, it raises money for the AIWF national “Days of Taste” program to educate 4th and 5th graders about healthy eating. The AIWF/Dallas Chapter’s Days of Taste is the nation’s most extensive.

This week, on the veranda of Ocean Prime Dallas in Uptown,  the AIWF held the big chef introduction event to meet the chefs who will be competing in this year’s event. They are:

Thomas Holt   Ruth’s Chris Steak House
Chad Kelley    Café Pacific
Andrea Maricich    The Second Floor
Antonio Marquez    Lazaranda Modern Kitchen & Tequila
Mark McDaniel    ReMARKable Affairs Catering
Kenny Mills    Chop House Burgers
Brandon Moore    Ocean Prime Dallas
Stan Rodrigues    Whiskey Cake Kitchen & Bar
Julio Peraza    Komali Contemporary Mexican Cuisine

The competition will be attended by over 500 people in the ballroom of the Westin Hotel. Typically, the chefs take  artistic license regarding Caesar Cardini’s classic salad recipe adding gratuitous protein and other accoutrements. Attendees sample each salad, accompanied by wine, and vote for the winner. Last year’s winner, Sonny Pache of Ocean Prime, is ineligible to enter this year but plays a kind of honorary role.
