Several dishes provide a modern take on Southern staples, not an unfamiliar offering for this beloved restaurant. Chef Coner Seargeant, Vice President of Restaurants at Headington Companies, shared an inside look on the creation and inspiration behind the new brunch dishes and how they encapsulate The Porch’s sense of quality and hospitality.
“The Southern charm of The Porch is evident in so many of these new items but with a fresh approach – take the Johnny Cakes for example,” said Seargeant. “Johnny Cakes, or hoecakes as they say in the South, are small hotcakes typically made with a cornmeal batter or from left over corn bread. In The Porch’s version, we add peppers and fresh corn to the mix and serve ours with four pieces of Nueske’s bacon, as well as Balcones whiskey maple syrup—the perfect combination of savory and sweet.”
This comfort-meets-contemporary approach continues with several more dishes, such as the Classic Breakfast Sandwich. “The Porch’s Classic Breakfast Sandwich features sausage made at our sister restaurant and bakery, Commissary. We add oil-cured peppers, salt the sweet peppers then pour hot, infused oil over them to really amplify the flavor,” said Seargeant. “Next, we top the eggs with Veldhuizen gold cheddar, made in Dublin, Texas, which is aged twice as long as their classic cheddar, producing a slightly sharper cheese and really smooth texture.”
The intricate detail and time spent on perfecting these brunch dishes was also put into amplifying the current cocktail menu. Highlights on the beverage side include the new gin-based Cosmonaut featuring The Porch’s housemade berry preserves shaken with fresh lemon juice, and Baby’s First Bourbon, a combination of Evan Williams bourbon, orgeat, lemon, and angostura.
“Baby’s First Bourbon is for those who might be dipping their toes into the shallow end of bourbon cocktails,” Seargeant said. “Created at Harvard & Stone bar in Los Angeles, it’s a riff on the classic Army & Navy cocktail. Our version substitutes the gin with bourbon – think whiskey sour with more richness and complexity thanks to the orgeat.”
In addition to a taste of these new items, The Porch is treating patrons to complimentary Bloody Mary Shots all weekend during brunch from 10:30 a.m. to 2 p.m., all summer long. And have no fear – the new menu arrivals are a complement to several long-loved items on the brunch menu such as the Giant Cinnamon Roll, Charrito Chilaquiles, and Avocado Toast.
