Whisk Crêpes Café, the creation of Parisian native Julien Eelsen, stands as a testament to the seamless blend of French culinary tradition and the relaxed charm of Dallas. Eelsen, who grew up in Paris, has journeyed from a global career with Air France to crafting a unique dining experience in Dallas—a city that, for him, mirrors the warmth and nostalgia of his childhood.

Eelsen’s love for cooking began in his early years, shaped by fond memories of foraging gooseberries, strawberries, and rhubarb with his grandmother and aunt. These fruits were transformed into jams that accompanied their homemade crêpes, instilling in Eelsen a lifelong passion for the art of crêpe-making. During his time in Paris, Eelsen further honed his skills by hosting underground dinners and vibrant gatherings for friends and family, showcasing his deep-rooted culinary expertise.

Upon relocating to Dallas, Eelsen sought to create a bistro that married his French heritage with the distinctive, laid-back vibe of Oak Cliff. The result was Whisk Crêpes Café, which opened its doors on October 6, 2015. This charming eatery captures the essence of a traditional French crêperie while incorporating a welcoming, Dallas-style atmosphere.

The menu at Whisk Crêpes Café features an array of both sweet and savory crêpes, each prepared with the same care and attention that Eelsen remembers from his childhood. Among the sweet offerings, the Citron Crêpe stands out with its luscious lemon curd, fresh strawberries, strawberry sauce, and a dollop of French whipped cream—a refreshing and elegant dessert that pays homage to classic French flavors. Another highlight is the Midnight in Paris, which combines dark chocolate, ice cream, raspberries, and whipped cream for a decadent and indulgent treat.

On the savory side, the Luka AKA The G.O.A.T crêpe showcases a delightful combination of fresh goat cheese, dried figs, honey, greens, and a balsamic vinaigrette.
