Located in Dallas at 5630 Village Glen Dr, Kyo Sushi and Omakase is more than just a restaurant; it’s a celebration of Japanese culinary art. Renowned for its exquisite sushi creations and the traditional practice of omakase, Kyo offers diners an authentic Japanese experience that combines the freshest ingredients with innovative flavors.
Kyo Sushi and Omakase operates as an intimate dining venue, featuring an eight-seat omakase pop-up at the luxurious Drey Hotel. Open Wednesday to Monday, the restaurant requires reservations for its omakase experience, which lasts 90 minutes. Guests can choose between two distinct omakase options: a 10-course menu for $99 or a 15-course menu for $130. Diners are encouraged to share their favorite dishes with Chef Han, who might even surprise them with complimentary extras.

For those looking for a casual outing, Kyo also offers a limited à la carte menu during lunch hours (11:30 AM to 3 PM), welcoming walk-ins. This menu features a variety of appetizing Inari sushi—available in raw, cooked, or vegetarian options—as well as maki rolls. Whether it’s a leisurely lunch or an elaborate omakase dinner, Kyo provides an exceptional culinary journey.
At the helm of Kyo is Chef Han whose journey in the culinary world spans 19 years. Starting as a kitchen helper, he quickly fell in love with Japanese cuisine, particularly the art of omakase. His experience working in various esteemed restaurants, including Sushigari, Nakazawa, and Poke, solidified his passion for sushi.
Chef Han’s move to Dallas was driven by familial ties and the dream of opening his own omakase business. He began Kyo as a home-based endeavor, catering to those who wanted a fine dining experience without the hassle of traffic. This concept resonated with many, leading to the establishment of Kyo at the Drey Hotel.

Creating the menu at Kyo involves a meticulous process. The chef emphasizes the importance of tasting different foods and ingredients for inspiration. He sources seafood from a Japanese trading company, ensuring that only the freshest and highest quality ingredients make it to the table.
While Kyo pays homage to traditional sushi practices, innovation is also key. Chef Han states, “I try new tastes but respect the traditional. Being innovative but not too wild is the most important key.” This balance allows Kyo to stand out in the competitive Dallas dining scene.
Kyo is known for several signature dishes that showcase the chef’s culinary expertise:
Salmon Belly with Tomato Confit: This dish pairs the rich, fatty salmon belly with the acidity of tomato, creating a harmonious balance of flavors.
Scallop Truffle: Known for its profound umami flavor, this dish is a favorite among diners, offering a luxurious experience in every bite.
The Kyo Stack: A decadent combination of Toro, scallop, uni, and caviar, this dish brings together some of the finest seafood available, delivering an unforgettable flavor explosion.

At Kyo, the dining experience is designed to be relaxing and enjoyable. The chef aims for guests to feel at ease, allowing them to engage in conversation while trusting him to curate their meal. “I want them to enjoy each piece of sushi without the stress of choosing from a menu filled with unfamiliar ingredients,” he explains.
Running a high-end sushi pop-up restaurant comes with its own set of challenges. One significant hurdle has been addressing misconceptions about omakase sushi versus regular sushi. Chef Han works diligently to educate diners on the unique qualities of the omakase experience, emphasizing its artistry and craftsmanship.
Throughout his career, Han has drawn inspiration from various culinary mentors. One pivotal influence was a previous employer in New York City, who taught him the values of patience and perseverance—qualities the chef now embodies in his own work.
Kyo Sushi and Omakase is a must-visit destination for sushi enthusiasts and anyone seeking an exceptional dining experience in Dallas. With its focus on authentic flavors, fresh ingredients, and the art of omakase, Kyo promises an unforgettable culinary journey that celebrates the beauty of Japanese cuisine. Whether you opt for the immersive omakase experience or a delightful lunch, Kyo offers a slice of Japan right in the heart of Texas.
