Bbbop Seoul Kitchen Unveils New Fusion Creations

bbbop Seoul Kitchen, a family-run restaurant by Chefs Greg and Sandy Bussey, and Sandy’s brother Steve Shin, known for its fusion of Korean and American flavors, has added new menu items reflecting bbbop’s mission to blend culture, tradition, and family-inspired innovation.

Guests can now enjoy the Bulgogi Kimchi CheeseburgerSpicy Chicken Sandwich, as well as the introduction of traditional yet approachable Kimbap.

The Bulgogi Kimchi Cheeseburger is bbbop’s take on the classic smashburger that pays homage to the Korean BBQ tradition. Made with premium beef, this burger is griddled to perfection, topped with kimchi, caramelized onions, house pickles, gooey cheese, a sweet-savory bulgogi glaze, and special sauce on a brioche bun.

Inspired by Greg’s son’s love for spicy fried chicken, the Spicy Chicken Sandwich blends a Korean-style fried chicken cutlet with just the right amount of heat. The chicken is topped with crunchy slaw and spicy gochujang that balance spice, acidity, and richness.

bbbop introduces Kimbap—a beloved Korean snack that combines toasted seaweed, rice, and fresh ingredients into an easy-to-eat roll. “Growing up, Sandy’s family made kimbap for camping and road trips. It was a great flavorful and healthy snack while on the move.” Greg explained, “It’s a comfort food with a communal feel, something families and friends enjoy making together.”

bbbop’s Kimbap is made with bulgogi steak, Korean spinach, carrots, pickled radish and egg, all wrapped in a sheet of toasted seaweed and bap (seasoned rice). Made fresh daily, the rolls offer a healthy snack perfect for on-the-go meals.

As the family explores new flavors, customers can expect creative twists on kimbap, with future offerings such as vegetarian and other interesting combinations.

Founder and Chef Greg Bussey’s love for global cuisine began with his travels at a young age, but his culinary curiosity deepened after meeting his wife, Sandy, who introduced him to Korean food and culture. Together, with Steve, the trio have built bbbop around the idea of fusion—honoring Korean flavors while weaving in elements from Thai, Chinese, Vietnamese, and American cuisines.

With contributions from Sandy and Steve’s parents, who help perfect recipes and even help with some of the prepwork and cooking, bbbop’s new menu items continue to reflect both generations of family influence and a desire to introduce Korean food to a wider audience.

“Our restaurant has always been about bringing people together, and the cultural diversity in our customer base and staff reflects that,” said Greg. “Food is a way to connect across cultures, and these new dishes are a way for us to share a little piece of our family’s journey.”
