Café Momentum Launches New Spring Menu

Café Momentum, the renowned non-profit restaurant and culinary training facility, has unveiled its fresh new spring menu, artfully crafted by Chef de Cuisine Aaron Collins. With an emphasis on seasonal ingredients, bold flavors, and meaningful impact, the new offerings invite diners to experience a menu that is as thoughtful as it is delicious.

Each dish reflects the restaurant’s mission to empower justice-involved youth through culinary training, education, and mentorship. Café Momentum’s youth interns have worked alongside Chef Collins to bring this seasonal vision to life, gaining valuable skills and experience in the process.

The spring menu features standout entrées like the Coffee-rubbed New York Strip, served with sautéed oyster mushrooms, turnips, spinach, and finished with roasted garlic and miso butter; Pan-seared Gulf Red Snapper with asparagus, fingerling potatoes, and crab buerre blanc. For a plant-based option, the Black Lentils dish is a combination of mixed spring vegetables, local greens, and grilled lemon tahini.

Those seeking comfort with a southern twist will enjoy the Jambalaya Gnocchi, a flavorful medley of potato gnocchi, house-made andouille sausage, and crawfish in a rich creole sauce. Another standout is the Rabbit Ravioli—handmade and filled with rabbit, cheese, and oyster mushrooms, topped with a white wine velouté. Rounding out the savory selections is the Texas Chipotle Caesar Salad, a bold reimagining of the classic with baby red romaine, chipotle Caesar dressing, parmesan cheese, and a cornbread crumble.

Desserts are equally inspired. The Pineapple Carrot Cake is topped with cream cheese frosting and lavender ice cream. The Avocado Cheesecake Mousse offers a smooth, creamy twist on a traditional favorite, while the seasonal fruit sorbet, featuring coconut lime, provides a refreshing finish.

With every meal served, Café Momentum continues to change lives by creating opportunity and building brighter futures. Proceeds from the spring menu directly support the restaurant’s 12-month paid internship program, which provides critical support to justice-involved youth through job training, life skills development, and education.
