Behind this exciting venture is Alan Mai, the original owner and industry veteran, whose passion lies in the art of creating delectable Vietnamese dishes to share with the Dallas community.
The story of Papaya Kitchen is not merely about a restaurant; it’s a statement about passion, reinvention, and a heartfelt commitment to local community. After the change of ownership of Green Papaya in 2019, Mai was approached countless times by loyal customers who missed not only the authentic Vietnamese cuisine but also the community aspect the restaurant had created.
During his retirement and throughout the pandemic, Mai continued to feel his heart yearning for the aroma of the original Green Papaya kitchen. Finally, he has decided to come out of retirement to give back to the community that’s been supporting him for years.
