We had heard that Justin Holt was making a move from Driftwood back to his old stomping ground in Bishop Arts, Lucia. Today we received word that this was indeed a fact. Check out the message below. Justin Holt Leaves Driftwood, Final Bowl of Ramen Served – For Now

DSC00925by Steven Doyle

We all love secret things. Just about every fast food menu has a secret sibling you can order from if you know the secret handshake. At one of the best seafood restaurants in Dallas there was a secret menu item if you knew how to go about ordering. Driftwood featured a bowl of ramen on certain days, and only at the bar. But don’t fret, the ramen has left the building. This was the special ramen made famous by local sous chef Justin Holt.

You recall the clandestine ramen nights at various Oak Cliff bars. Those nights went away when Holt took a position at Driftwood, and he began serving the soup as a special. The only problem is Holt’s last evening at Driftwood was Saturday, and I ordered the final bowl.   Continue reading

What happens when you pool the largest cache of local chef talent in Dallas? It all went down last night to a capacity crowd at Driftwood where seven of the city’s most talented sous chefs assembled for a single brilliant evening. After seven platefuls of measured art and mastery, patrons of the young chefs smiled and applauded graciously. Look for all these rising stars at their respective restaurants, and in the very near future taking the helm of their own kitchens, to be sure.   Continue reading

More Midnight Ramen At Ten Bells Tavern This Saturday

Justin Holt’s last night at Lucia is this Saturday. After that you can find the up-and-coming chef cooking alongside his new boss and execu-chef, Omar Flores at Driftwood. You may recall the Holt name from his delightful pop-up ramen nights at a few Oak Cliff bars. The young chef would spend a week conjuring up killer ramen, which happens to be one of the hot new trends in dining, serving it up in cute Styrofoam cups for a mere five bucks.

Soon after Holt announced he was making his move to the seafood-centric restaurant Driftwood, he made comments about giving up on his ramenriffic dreams. Well, this is simply not true. When we caught wind of the new ramen night, which will be held at Ten Bells Tavern in the Bishop Arts District in Oak Cliff, we checked in on Holt. “I’ve got a game plan that should keep me on the road to ramageddon I’m going to stick with it,” said the chef.    Continue reading

Midnight Ramen Redux At Ten Bells This Saturday

Ramen is the hot new topic on the lips of local food types. It is the perfect food with house-made noodles, a rich steamy broth, meaty pork belly and hopefully a wonderful poached egg. Just a few weeks back local chef from Lucia, Justin Holt, hosted two nights of ramen at  a few Oak Cliff night spots. I just received a text from the chef saying he is pumped about another night of ramen at Ten Bells Tavern this Saturday night, March 9, 2013.   Continue reading
